Almond and Strawberry Coffee Cake (gluten-free and dairy-free)

Ingredients

  • 3 eggs, large
  • 1/2 c unsweetened applesauce
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 3/4 c coconut sugar
  • 1 c gluten-free baking flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 c slivered almonds
  • 1/2 c thinly sliced strawberries, fresh

Instructions

  1. Preheat oven to 350 F and prepare an 8 inch round pan with parchment paper lining the bottom as well as non-stick cooking spray.
  2. In a mixing bowl, stir together the flour, coconut sugar, baking soda, baking powder and salt until well combined.
  3. In a separate bowl, beat the eggs, applesauce, coconut oil, vanilla and almond extract until well combined. Slowly add your wet ingredients to the dry and stir just until no dry spots remain.
  4. Transfer batter to the pan and top with sliced strawberries. Cover strawberries with almonds. Bake for 27-30 minutes or until the center is solid. Let cool and serve!
