Healthy Butter Pecan Cookies with Chocolate Chunks

Healthy Butter Pecan Cookies– all the deliciousness of a traditional chocolate chip cookie with soft, fluffy centers, crisp edges, loaded with chocolate chunks and a sprinkle of sea salt plus the indulgent addition of crunchy pecans. Brown sugar is an important flavor when it comes to recreating traditional chocolate chip cookies and thankfully Swerve just launched a new product that solves all my brown sugar replacement problems (that’s a real issue I have lol). I’m already obsessed with Swerve for their incredible granulated and powdered sugar replacements so when I saw that they made a brown sugar replacement, I literally jumped for joy! And of course, had to make a batch of cookies asap!

Healthy Butter Pecan Cookies with Chocolate Chunks


  • 2 c gluten-free baking flour
  • 1/2 c granulated zero calorie sweetener (Swerve)
  • 1/2 c zero calorie brown sugar (Swerve)
  • 1/4 c butter, room temperature
  • 1 egg, large
  • 1/4 c cream cheese, room temperature
  • 1/4 c unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1 tbsp gluten free molasses (omit if needed)
  • 1/2 c chopped pecans
  • 1/4 c chopped sugar-free chocolate (Lilys)


  • In a mixing bowl, stir together the flour, baking powder and salt. Set aside.
  • In another bowl, using a hand held mixer or stand alone mixer, cream together the butter, zero calorie brown sugar and granulated zero calorie sweetener. Add in the cream cheese and continue to blend until smooth. Add in the almond milk, molasses and vanilla until blended. Add in the dry ingredients and mix until a dough forms. Fold in chocolate and pecans. Cover and chill for 4 hours. Once ready to bake, let sit at room temperature for 15 minutes. Preheat oven to 350 F and prepare a baking sheet with parchment paper.
  • Use a 1" cookie scooper to scoop the cookie dough and place the mound of the prepared baking sheet. Place cookies about 1 1/2" apart and then use a spatula to press them down to your desired thickness. Bake for 11-13 minutes or until edges start to brown. Let cool on the cookie sheet for 5 minutes before transferring to a cooling rack to continue cooling. ENJOY!

Is it possible to substitute almond flour and/or coconut flour to make the recipe low carb? Thanks!


I’ve never tried that combination. The cookies might come out a little dense. If you want to give it a go, maybe try 1 3/4 c almond flour and 1/4 coconut flour. Just make sure your dough isn’t too dry or too wet. Let me know how it goes!
