These gluten-free Chocolate Chunk Strawberry Energy Bites make a perfect on the go snack, breakfast or even dessert. Packed with whole grain oats, freeze dried strawberries, almond butter and chocolate chips–this no fail recipe is the ultimate satisfying no-bake treat!

Chocolate Chunk Strawberry Almond Butter Energy Bites (vegan & gluten-free)

Ingredients

  • 1 1/4 c gluten-free old fashioned oats
  • 1 1/4 c natural almond butter
  • 1/4 c unsweetened desiccated coconut
  • 2 tbsp chia seeds
  • 1/3 c honey or agave for vegan
  • 1/4 c chocolate chips, vegan if necessary
  • 1/4 c freeze dried strawberries, crushed

Instructions

  1. In a large bowl or stand alone mixer, stir together all the dry ingredients. Add in the honey and almond butter and then mix until combined.
  2. Roll into balls and serve.
