Chocolate cookies are on a regular rotation in my house. A couple weeks ago I made vegan chocolate cookies stuffed with caramel (to die for!) and a few weeks before that I made flourless chocolate peanut butter cookies (also to die for!). These double chocolate cookies are naturally made gluten-free, dairy-free and refined sugar-free using ground almonds, cocao powder, vegan butter, eggs, coconut sugar and a few other simple ingredients.

The Secret to a Perfect Cookie

I’ve said this before and I’ll say every time I post a cookie recipe because it’s the most important part when it comes to baking cookies (especially mine and especially if you like your cookies fudgy not cake like). Baking using natural and healthy ingredients can be tricky and cookies and brownies can often come out with a cake like texture. Don’t worry there’s a secret to getting perfectly chewy and dense cookies every single time. The most important thing I do with every single cookie and brownie is undercook them. Cookies and brownies will harden as they cool and continue cooking thus leaving a dense and fudgy center! *drooling*

Double Chocolate Sweet & Salty Flourless Cookies (gluten-free, low carb)

  • 1 1/2 c almond meal, finely ground
  • 1/2 c coconut sugar
  • 1/2 c unsweetened cocao powder
  • 1/2 c chocolate protein powder PEScience 30% off code PBCHOCO
  • 1/4 c dairy-free butter, warm
  • 2 eggs, large
  • 1-2 tbsp unsweetened applesauce
  • 1 tsp vanilla extract
  • flaked sea salt
  • 1/4 c sugar-free dark chocolate chips
  • gluten-free pretzels for topping


  1. In a stand alone mixer, stir together all the almond meal, coconut sugar, protein powder, cocao powder and baking powder. Add in the the butter, vanilla, eggs and applesauce. Mix until a sticky dough forms. If too dry, add more applesauce. Fold in chocolate chips. Cover the dough with plastic and plastic and place in the freezer for 30 minutes.
  2. Preheat oven to 350 F and prepare a baking sheet with parchment paper. Use a cookie scooper to scoop 1 1/2 inch balls (mine made 14) and place them on the baking sheet. Use the bottom of glass to press them flat (it helps if you spray it with non-stick spray first so they don't stick as much). Press a pretzel into the center.
  3. Bake for 7-8 minutes. Don't over bake! Top with flaked sea salt let cool completely before serving.
