Gluten Free Thick & Chewy Chocolate Chip Peanut Butter Cookies
These amazing gluten free peanut butter chocolate chip cookies are simply out of this world and so easy to make they are dangerous! If you love your cookies thick and chunky, with a delicious chewy moistness in the center, these cookies are perfect for you. A healthy and gluten free version of a classic favorite and with just five ingredients, you can’t beat this awesome peanut butter cookie.
For my peanut butter chocolate chunk cookies I used all natural creamy peanut butter, you know the drippy kind that you can pour straight from the jar? I would avoid using commercial peanut butters such as Skippy or Jif as they have added ingredients and most often contain palm oil. For these cookies, look for a peanut butter that’s 100% peanuts. You will still get a thick and chewy peanut butter cookie just like the classic versions.
If you prefer nuts in your cookies, going for an all natural crunchy peanut butter works as well or adding a handful of walnuts will give your cookies the crunch you desire.
All you need is just a few ingredients to bring these cookies together and most of them are probably in your kitchen cabinet already. All right, let’s get started. First, I used peanut butter which we already talked about so I won’t bore you with more peanut butter nonsense. Next, I sweetened these bad boys using a mix of coconut sugar and Truvia but you can sub one for the other even use a granulated erythritol. For the flour, I used a gluten free brown rice flour but gluten free oat flour or any gluten free baking blend will work. I used one egg lightly beaten and then added vanilla extract and salt for taste, baking soda for rising and a little water to moisten the dough. That’s it! Ohhhh and of course, I added some chocolate chips for good measure.
