Healthy Almond Butter Chocolate Chip Cookies


These flourless almond butter cookies are soft and chewy just like classic chocolate chip cookies but without all the added sugar, dairy and gluten. These amazing almond butter cookies are loaded with dark chocolate and lightly sprinkled with sea salt.

When I first set out to make these cookies, I had this idea of how they would look. I figured I would top the cookie dough mounds with a square of dark chocolate [that would stay perfectly intact] and I would have these beautiful cookies with nice little Ghiradelli squares on top. Well this did not go as plan because chocolate melts when you put it in the oven. You would think after years of working in food, I would know this. They still taste amazing and now they look kind of cool. 🙂

I mean, they look kind of interesting right?

Did I mention that these cookies taste even better the next day right out of the refrigerator? These cookies are probably one of the best batches of almond butter cookies I’ve ever made.

Healthy Almond Butter Chocolate Chip Cookies


  • 3/4 c all natural almond butter
  • 1/2 c coconut sugar
  • 1/4 c Truvia
  • 1 egg, whole
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 1/4 c chocolate chips
  • 1/4 dark chocolate bar


  1. Preheat oven to 350F and prepare a baking sheet with parchment paper.
  2. Place all wet ingredients into a bowl and stir until completely incorporated. Add remaining ingredients (except chocolate) and continue mixing until a dough forms. Fold in the chocolate chips.
  3. Spray a cookie scooper with non-stick spray and scoop cookie dough into 2" mounds and place them on the baking sheet at least 2-3" apart. Top the cookie dough mounds with pieces of dark chocolate and bake cookies for 9-11 minutes.
  4. Let cool for 3 minutes before transferring to a cooling rack. *Best if stored in an airtight container in the fridge.
