Healthy Almond Butter Coconut Bars

These almond butter candy bars are covered in decadent chocolate and stuffed with toasted coconut for a sweet crunch–a healthy sweet treat sprinkled with whatever toppings your heart desires. (vegan, paleo, refined sugar-free & gluten-free!)

A rainy Saturday night calls for chocolate in for the form of candy bar loaded with almond butter and stuffed with toasted coconut flakes. How do you spend your weekends? This is a usual weekend for me. I bake, have a glass a wine and edit photos while I watch reruns of Forensic Files. Anyone else obsessed with true crime shows?

These bars are so incredibly easy to make because they have just 5 ingredients (not including toppings) and take just a few minutes to whip up!

Healthy Almond Butter Coconut Bars

Almond butter coconut candy bars with a healthy twist. Made gluten-free, refined sugar-free, vegan and paleo!


  • 1 c almond butter, natural
  • 1/4 c maple syrup
  • 1/4 c coconut sugar
  • 3/4 c toasted coconut flakes
  • 1 sugar-free chocolate bar, melted (100g)
    Toppings optional
  • coconut flakes
  • hemp seeds
  • slivered almonds
  • dried rose petals


  • In a medium sauce pan, combined the coconut sugar, maple syrup and almond butter over low heat. Cook for 3-4 minutes, stirring occasionally. Remove from heat and stir in toasted coconut.
  • Press the mixture into a loaf pan lined with parchment paper or plastic wrap. Place in the freezer for 1 hour.
  • Melt chocolate. Remove mixture from the freezer and cut into bars. Spoon chocolate over each bar. Sprinkle with toppings. Serve immediately or return to the freezer until ready to serve. Let thaw at room temperature for 10 minutes before serving.
