Healthy Baked Chocolate Donuts with Blood Orange Glaze

These super simple baked chocolate protein donuts are topped with a delicious blood orange glaze and are made gluten-free and refined sugar-free!


After weeks of searching farmer’s markets, I finally found blood oranges at my local grocery store in the exotic fruit section. I never forget to check there because I’m amazed at what I discover. Last time I went searching in that section the produce manager saw me staring with a confused look on my face and came over to help. I had no idea what I was looking at but apparently it was some sort of cactus so he cut a piece for me to try and although I didn’t like it (kind of just tastes like a cucumber), I was intrigued and now I never skip that section.

Chocolate and citrus is one of my favorite flavor combinations (obviously peanut butter and chocolate is my all time fav) so when I finally got my hands on some blood oranges, I knew I had to create something using that combo thus creating these delicious chocolate blood orange glazed donuts.

Ingredients

    Donuts
  • 3/4 c gluten-free flour or can be subbed with brown rice flour
  • 1/2 c mashed banana, pumpkin, sweet potato or applesauce (I used banana)
  • 1/4 c unsweetened almond milk
  • 1/4 c unsweetened cocao powder (I split mine with special dark and regular)
  • 32g chocolate protein powder PEScience 30% off code PBCHOCO
  • 1 egg
  • 3 tbsp egg whites or 1 egg white
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • salt to taste
  • stevia to taste

Instructions

  1. Preheat oven to 350F and prepare a standard donut pan with non-stick spray--be generous.
  2. Place the eggs, milk and mashed banana or starch of choice into a mixer and beat for 1 minute or until fluffy. Add in the remaining ingredients and continue mixing until a batter forms. Try not to over mix.
  3. Place the batter into a piping bag (ultimately you can use a plastic bag and cut the corner to create a piping bag) and pipe the batter into the molds. Mine filled 6 molds.
  4. Bake for 10-12 minutes. Let cool completely.
  5. In a shallow bowl stir together the protein and juice from the blood orange. Add in the melted coconut oil and continue mixing until incorporated and you have a glaze like consistency. If yours is too runny or too thick, see notes.
  6. You can dip each donut in the glaze or spoon it over the top. I used a combination of both.
  7. Place the donuts into the refrigerator until glaze stiffens. Enjoy!

Notes

For the glaze: every blood orange will be different so you may not have enough juice or too little. If your glaze is too runny, try adding more protein powder 1 teaspoon at time. If your glaze is too thick, add water or more juice 1 teaspoon at a time until you have reached your ideal consistency.
