A delicious layer of blackberries sandwiched between a banana oat crust. These bars are made vegan, gluten-free and high in protein–a perfect summer breakfast treat.
I haven’t baked much with blackberries. I usually just tend to add them a top some granola or a parfait (which is also perfectly acceptable) but today I really wanted to make myself a colorful breakfast that I can take with me on the go. Something that can easily be stored and transported for later consumption. These blackberry oatmeal bars were the perfect solution.
