Healthy Chocolate Chip Hazelnut Cookies

Extra soft chocolate chip hazelnut cookies made using only real healthy ingredients and little bit of protein powder.


I’m back! I’ve haven’t posted in well over a week–sorry about that. I was moving and getting settle into my new place. Also, I’ve been working on some new things I have in development which I’m really excited about and can’t wait to share!

But nothing has changed in the last week when it comes to my love for hazelnuts. Spoiler alert!… I’m still obsessed.



I made these cookies and then immediately decided it needed more hazelnut and added Nuts ‘N More hazelnut spread with cocoa and it was to die for.

Healthy Chocolate Chip Hazelnut Cookies

Healthy hazelnut cookies loaded with sugar-free chocolate chips.


  • 3/4 c brown rice flour
  • 1/4 c vanilla protein powder (I used PEScience 30% off code PBCHOCO)
  • 1/2 c Truvia or granulated sweetener of choice
  • 1 egg yolk
  • 5 tbsp almond milk
  • 4 tbsp Smart Balance or butter replacement of choice
  • 1/8 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 c whole hazelnuts
  • 2 tbsp sugar-free chocolate chips


  1. Preheat oven to 350F and prepare a baking sheet with parchment paper or a silicone mat.
  2. Place the flour, protein, sweetener, baking soda and baking powder into a mixer and mix until combined.
  3. In a small bowl, warm the butter in the microwave just until it's slightly melted. Add the egg and almond milk to the butter and whisk until smooth.
  4. Add the egg mixture to the dry ingredients in the mixer and mix using a paddle attachment until a dough forms.
  5. Place the chocolate chips and hazelnuts into a food processor and blitz just until you have small pieces. Add the pieces into the mixer and mix just until combined.
  6. Roll the dough into 12 evenly sized balls and place them on the baking sheet. Use the bottom of a glass to press them flat. This works best if you spray the bottom of the glass with non-stick spray or gently wet with water.
  7. Bake cookies for 12-14 minutes. Let cool before devouring.
