With Memorial Weekend coming to an end, I thought I would make you something with extra chocolate to make your week a little extra sweet. I know it definitely brightened mine. I promise you, one of these on a Tuesday morning just after Memorial Monday will make that Tuesday feel like Friday again. Or at the very least a Thursday. Add these vegan granola bars to your weekly meal prep and you will not be disappointed.

Healthy Double Chocolate Vegan Granola Bars

Yield: 8

Healthy Double Chocolate Vegan Granola Bars

Ingredients

  • 2 c gluten-free rolled oats
  • 1/3 c unsweetened cocoa powder
  • 1/3 c peanut butter, natural
  • 1/2 c maple syrup
  • 1/2 c dark chocolate, chopped

Instructions

  • In a large mixing bowl, stir together the peanut butter, cocoa powder and maple syrup until smooth. Add in the oats and stir until combined. Press the mixture into the bottom of a 9x9 inch pan or baking dish lined with parchment paper. Chill for 1 hour.
  • Remove and cut into bars.
  • Melt the chocolate in a microwave safe bowl. Dip the bottom of each bar into the chocolate and use a spoon to scrape off the excess chocolate. Place on a piece of parchment paper and return to the refrigerator to chill until chocolate is solid. Serve.
