Healthy Gingerbread Cut Out Cookies (gluten-free)

Ingredients

  • 3/4 c almond flour
  • 1/2 c gluten-free flour
  • 1/2 c protein powder PEScience 30% off code PBCHOCO
  • 1/4 c Truvia or granulated sweetener
  • 1 tbsp Tapioca flour
  • 3 tbsp blackstrap molasses
  • 1 egg, whole
  • 2 tbsp unsweetened almond milk
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/8 tsp ground ginger
  • 1/8 tsp salt

Instructions

  1. Place all dry ingredients into a mixer and mix until combined. Add in the remaining ingredients and mix using a paddle attachment until a dough forms. You may need to stop and scrape the sides.
  2. Wrap dough in plastic and place in the freezer for 20 minutes.
  3. Preheat oven to 375F and prepare a baking sheet with parchment paper. Remove and roll dough out about 1/4 inch thick on a clean dusted surface. I used tapioca flour for dusting.
  4. Place the cut outs on the baking sheet about 1" apart. Bake for 6-7 minutes. Don't over bake. Let cool before serving.

Notes

I prefer these cookies without icing but for the photo I just used powdered erythritol and almond milk. I didn't measure--just mixed until I got the consistency I was looking for.
