Heathy No-Bake Ombré Cheesecake Parfait

  • 1 tbsp coconut sugar
  • 2 tbsp almond flour
  • 1 tbsp gluten-free flour or flour of choice
  • 1/2 tbsp coconut oil, melted
  • 1/2 tbsp sticky syrup of choice
    For the Cheesecake
  • 1 single serve container Greek Yogurt
  • 2 oz reduced fat cream cheese
  • 1 scoop vanilla protein PEScience 30% off code PBCHOCO
  • 3 tbsp roasted beet purée
    Fruit for topping

  • In a bowl, stir together all crust ingredients until small crumbles form. Press the crumbles into the bottom of a serving glass (save about 1 tablespoon for topping).
  • Place the greek yogurt, cream cheese, protein and 1 tablespoon of beet purée into a blender until smooth. Stop and scrape the sides as needed.
  • Remove 1/3 of the mixture and place it into the serving glass.
  • Add another 1 tablespoon of beet purée to the blender and continue to blend until incorporated. Remove half of the mixture and place it in the serving glass.
  • Finally, add in the last tablespoon of beet purée and blend until incorporated. Fill glass with remaining mixture. Top with berries and saved crumbles.
  • Cover and save for later or serve immediately.

For the beet purée: I like to prep a bunch of this to use in smoothies and other things. All you have to do is wash beets well, wrap in foil and cook in the oven for 1 hour at 400 F. Let cool and remove skins before placing into a food processor or blender on high until smooth.
