Heathy No-Bake Ombré Cheesecake Parfait

Ingredients

    Crust
  • 1 tbsp coconut sugar
  • 2 tbsp almond flour
  • 1 tbsp gluten-free flour or flour of choice
  • 1/2 tbsp coconut oil, melted
  • 1/2 tbsp sticky syrup of choice
    For the Cheesecake
  • 1 single serve container Greek Yogurt
  • 2 oz reduced fat cream cheese
  • 1 scoop vanilla protein PEScience 30% off code PBCHOCO
  • 3 tbsp roasted beet purée
    Fruit for topping

Instructions

  1. In a bowl, stir together all crust ingredients until small crumbles form. Press the crumbles into the bottom of a serving glass (save about 1 tablespoon for topping).
  2. Place the greek yogurt, cream cheese, protein and 1 tablespoon of beet purée into a blender until smooth. Stop and scrape the sides as needed.
  3. Remove 1/3 of the mixture and place it into the serving glass.
  4. Add another 1 tablespoon of beet purée to the blender and continue to blend until incorporated. Remove half of the mixture and place it in the serving glass.
  5. Finally, add in the last tablespoon of beet purée and blend until incorporated. Fill glass with remaining mixture. Top with berries and saved crumbles.
  6. Cover and save for later or serve immediately.

Notes

For the beet purée: I like to prep a bunch of this to use in smoothies and other things. All you have to do is wash beets well, wrap in foil and cook in the oven for 1 hour at 400 F. Let cool and remove skins before placing into a food processor or blender on high until smooth.
