Healthy Pumpkin Spice Protein Waffles

These pumpkin spice waffle waffles are a perfectly healthy Fall breakfast. Top with yogurt or maple syrup.


  • 1/4 c pumpkin puree
  • 1 c brown rice flour
  • 2 eggs, whole
  • 1/4 c coconut sugar
  • 1 c almond milk

  • 1 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder


  1. In a large bowl, whisk together the egg, almond milk, pumpkin and vanilla. Add in the melted coconut oil while mixing. Next add all the remaining dry ingredients and stir until a batter forms.
  2. Cook the batter 1/4 cup at time on a preheated waffle iron on HIGH heat until golden brown for a small waffles. Cook batter 1/2 cup at a time for large waffles.
  3. Recipe makes 6 small or 3 large waffles.
