I’ve received tons of messages over the years asking for paleo recipes as I tend to use oats and peanut butter in most of mine.  So I present to you this super delicious and super simple Paleo Granola made of almonds, seeds, shredded coconut, flax meal and lathered in coconut oil and almond butter. A nutty and seedy snack that’s irresistible and seriously addicting! I made this recipe paleo like you asked as well as gluten-free and keto friendly! YAY! Now everyone can enjoy this granola.

My favorite way to eat granola is just like a big bowl of cereal with cold almond milk and loaded with fruit. Occasionally, I’ll sprinkle some granola over a smoothie bowl or a cup of yogurt. Paleo & Grain-Free Granola (Keto Friendly Option)

This Keto Friendly and Paleo Granola is an easy and satisfying gluten-free and vegan granola recipe that makes the perfect breakfast or snack.

Ingredients

  • 1/3 c walnuts, chopped
  • 1/4 c pumpkin seeds
  • 1/4 c almonds, chopped
  • 1/2 c unsweetened coconut flakes
  • 2 tbsp ground flax
  • 6 tbsp natural almond butter
  • 2 tbsp coconut oil, melted
  • 2 tbsp pure maple syrup or sugar free maple syrup for keto

Instructions

  1. Preheat oven to 350 F and prepare a baking sheet with parchment paper.
  2. Place all the dry ingredients into a stand alone mixer and stir until combined. Add in the remaining wet ingredients and mix until well incorporated (I used the paddle attachment).
  3. Spread the mixture in one even layer on the baking sheet. Bake for 12-15 minutes, stirring every 5 or so minutes. Granola will harden as it cools.

Notes

Store granola in an airtight container for up two weeks.

I have to be honest, this recipe almost didn’t make it to the blog because I almost didn’t get photos of it. After this deep dish brownie came out of the oven, it took all my will power not to take a spoon to it right then and there. The peanut butter was oozing out the top and the warm chocolate chunks were calling me name (although they were probably scolding hot!).

If you follow my blog on a regular basis, you know that I am no stranger to baking my treats in the skillet. Actually, it’s one of my favorite ways to bake. I also really love the rustic look of a cast iron skillet and gives my photos a fun, moody look. Here are a few other skillet recipes I’ve made:

Ingredients

  • 3/4 c gluten-free baking flour
  • 1/4 c coconut sugar
  • 1/4 c Swerve Sweetener, granulated
  • 1/4 c unsweetened cocao powder
  • 1/4 c unsweetened applesauce
  • 1/4 c olive oil or coconut oil, melted
  • 100g dark chocolate (dairy-free), chopped
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch sea salt
  • 2 tbsp peanut butter, natural

Instructions

  1. Place all your dry ingredients into a mixer and mix until combined. Add in the wet ingredients and continue mixing until a dough forms. Fold in chopped chocolate. Wrap dough in plastic and place in the freezer for 15 minutes.
  2. Preheat oven to 350 F and prepare an 8 inch cast iron skillet with non-stick spray. Press half of the cookie dough into the bottom of the skillet. Drop the peanut butter into the center and cover with remaining dough. It helps to lay a piece of parchment paper over the dough to press it down and pack it tightly. Bake for 13-16 minutes. Don't over bake. Let cool for 10 minutes before serving.

I don’t know about you but if I don’t have healthy snacks around at all times, I tend to be easily tempted by my boyfriend’s cabinet full of Chewy Chips Ahoy cookies and Strawberry Poptarts. Keeping healthy snacks around the kitchen is essential to keep me from eating an entire box of Oreos. This week I made these vegan, gluten-free and refined sugar-free no bake granola bars full of oats, peanut butter, banana, agave and pretzels. I also tossed in some chia seeds for good measure. 😉

Adding gluten-free pretzels to my baked goods is seriously one of my favorite past times. Not only do they photograph beautifully but I’m a real sucker for a good sweet and salty combination. Healthy No Bake Peanut Butter Pretzel Granola Bars

Healthy No Bake Peanut Butter Pretzel Granola Bars

Healthy No-Bake Peanut Butter Pretzel Bars.

Ingredients

  • 1 mashed banana, ripe
  • 3/4 c peanut butter
  • 1/4 c agave
  • 2 1/2 c rolled oats (gluten-free)
  • 1/4 c pretzels pieces (gluten-free)
  • 1 tbsp chia seeds

Instructions

  1. In a large bowl, stir together the banana mash, peanut butter and agave until well combined. Add in the oats and chia seeds and stir well. Fold in the pretzel pieces.
  2. Press the mixture evenly into the bottom of an 8x8 inch pan lined with parchment paper.
  3. Chill in the freezer for 20 minutes before cutting into 9 squares and serving.
