Another day, another peanut butter recipe. This time in the form of a granola bar. I made these healthy peanut butter granola bars vegan with a twist of banana. I didn’t use freshly ripe bananas though. I used banana chips for a little crunch in my bar and extra pep in my step–I really love banana chips!


I hope you like oats because I had an entire day of baking with rolled oats. I’ve got some pretty delicious [oat] recipes coming at you in the next week so be prepared for dessert for breakfast type of recipes…aka…my favorite kind of recipes. This vegan granola bar recipe was fairly simple. I used gluten-free rolled oats, banana chips, natural peanut butter, dates, pure maple syrup and dairy-free chocolate chips–that’s it. If you are looking for a simple and tasty treat that’s easy to take on the go, look no further because these bars are just what you are looking for!

Healthy Peanut Butter Banana Chip Vegan Granola Bars

Healthy Peanut Butter Banana Chip Vegan Granola Bars

Healthy peanut butter vegan granola bars with banana chips! A perfect on-the-go snack!

Ingredients

  • 2 c rolled oats, gluten-free
  • 1 c banana chips + more for topping
  • 1/4 dairy-free chocolate chips
  • 7 medjool dates, pitted
  • 1/2 c natural peanut butter
  • 1/4 c pure maple syrup

Instructions

  1. Place the dates, peanut butter and maple syrup into a food processor and pulse until smooth. You may need to stop and scrape the sides as needed.
  2. Crush banana chips (you can do this by hand or in a food processor) into small pieces and add them to a stand alone mixer along with the oats and chocolate chips. Stir until combined. Add in the peanut butter mixture and mix until well combined. Mixture will be very sticky.
  3. Press the mixture evenly into a 9x9 inch pan or baking dish lined one way with parchment paper for easy removal and spray with non-stick spray. It helps if you wet your fingertips before pressing the mixture into the pan.
  4. Bake for 20-25 minutes at 350 F. Let cool before cutting into 12 bars and serving.

These peanut butter chocolate chip cookies are my absolute favorite healthy cookie recipe and I think they are calling your name. If you love soft, chewy, melt-in-your-mouth cookies then these are everything you have been looking for while still being low in carbs, sugar and gluten-free.

Am I the only person who has to slap peanut butter onto everything they bake and eat? I really hope not because peanut butter is life! [insert yasss queen emoji here]


I made a couple batches of this recipe while trying to perfect it and in doing so I discovered a secret to a perfect chocolate chip cookie. Undercooking it or not over cooking it. However you look at it, the cook time is a very important factor to consider. My first batch I baked a little too long and they turned out very cake like and dry. The second time around I removed the cookies from the oven before I thought they were ready. They continued to cook even after I took them out of the oven and by the time they cooled, they were PERFECT! So yummy!

Can we just take a second to admire the perfection of this cookie dough. You guys should know that it took all my strength not to jut eat handfuls of this before I baked it. It took ALL OF MY STRENGTH!

Healthy Soft & Chewy Chocolate Chip Cookie

Soft and chewy peanut butter chocolate chip cookies made gluten-free, refined sugar-free and high in protein!

Ingredients

  • 1/2 c + 2 tbsp natural peanut butter
  • 1 1/4 c gluten-free flour
  • 1/2 c vanilla protein powder PEScience 30% off code PBCHOCO
  • 1/4 c coconut sugar
  • 1/4 c granulated zero calorie sweetener Swerve
  • 1 egg, large
  • 2 tbsp coconut oil, melted
  • 1/2 c water
  • 1 tsp vanilla extract
  • 1/8 tsp finely ground sea salt
  • 1 tsp baking powder
  • flaked sea salt for sprinkling
  • 1/2 c sugar-free chocolate chips

Instructions

  1. Preheat oven to 325 F and prepare a baking sheet with parchment paper.
  2. Place the gluten-free flour, protein, coconut sugar, granulated zero calorie sweetener, salt and baking powder into a mixer and mix until combined.
  3. Add in the peanut butter, egg, coconut oil and vanilla. Mix using a paddle attachment until a crumbly dough forms. Add in the water 1/4 cup at time until dough comes together. Fold in chocolate chips.
  4. Use a cookie scooper to scoop and drop cookies onto the prepared baking sheet. Use a fork to press them down slightly--the thicker they are, the softer and chewier they will be!
  5. Bake cookies for 7-8 minutes. It's very important that you don't over bake them! Remove and let cool for 10 minutes before sprinkling with flaked sea salt and serving.

I thought I would post one of my favorite desserts to make: banana bread. My different variations of this delicious dessert are some of my most popular recipes in my archives. If you searched banana bread on my blog you would get endless pages of results. Some different versions include: double chocolate, chocolate chip, lemon poppy seed, chocolate marble (I really like chocolate), cinnamon apple and blueberry flax.


For this bread, I was craving something classic. No crazy flavors. Instead, I added chia seeds and ground flax for a little extra fiber! Of course, I added protein powder for the extra protein but also to give it a delicious sweet vanilla flavor. You can use whatever kind of protein you like. Even plant based protein will work in this recipe. I used PEScience Gourmet Vanilla Select protein. Healthy Chia Flax Banana Bread

Healthy Chia Flax Banana Bread

Moist and tasty banana bread made with chia seeds and flax!

Ingredients

  • 4 bananas, overly ripe
  • 3 eggs, large
  • 1 1/4 c gluten-free baking flour
  • 64g protein powder PEScience 30% off code PBCHOCO
  • 1/4 c almond milk
  • 1/4 c coconut oil, melted
  • 1/4 c granulated sweetener Swerve
  • 1/4 c flax meal
  • 3 tbsp chia seeds
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp baking soda
  • pinch sea salt

Instructions

  1. Preheat oven to 350 F and prepare a 9x12 inch loaf pan with non-stick spray and parchment paper.
  2. Place the eggs, 3 bananas (save the 1 for topping), milk and vanilla into a mixer and beat until fluffy. Ultimately you can place them in a large bowl and use a hand held mixer. Add in the dry ingredients and stir until no dry spots remain. Add melted coconut oil and stir until incorporated.
  3. Pour the batter into the prepared pan and bake for 50-55 minutes. Let cool before cutting into slices and serving.
