I’ve done it again, I’ve made a new banana bread recipe for what is probably the hundredth time on this blog. When I first started blogging and creating recipes, I thought that there were like three or four different variations of banana bread: plain, chocolate chip, pumpkin and chocolate banana bread. That was a very narrow way of thinking on my part because there are endless variations and flavors of banana bread.

Every week I find myself with a handle of overly ripe bananas sitting on my counter and every week I’m challenged to create a new banana bread recipe. This week I sweetened my banana bread with honey and added poppy seeds for a little extra crunch. I’m not a huge fan of using bananas in recipes other than banana bread or healthy pancakes–you should totally try if you haven’t yet!

Poppy Seed Honey Banana Bread

Poppy Seed Honey Banana Bread

Ingredients

  • 2 ripe bananas, mashed + 1 for topping if desired
  • 3 eggs, large
  • 1/3 c honey, raw
  • 3 tbsp coconut oil, melted
  • 3 tbsp unsweetened applesauce
  • 1/4 c unsweetened almond milk
  • 1 1/2 c gluten free baking flour
  • 2 tsp baking soda
  • 2 tsp vanilla extract
  • 1 tbsp poppy seeds
  • 1/4 tsp salt

Instructions

  • Preheat oven to 350 F and prepare a loaf pan with non-stick spray and parchment paper one way for easy removal.
  • In a mixing bowl, stir together the flour, baking soda, salt and poppy seeds. Set aside.
  • In another bowl, beat together the mashed bananas, eggs, applesauce, milk and vanilla until light and fluffy, about 1-2 minutes using a hand held mixer. Quickly stir in the melted coconut oil (so it doesn't become a solid). Add the wet ingredients to the dry and stir until combined. Transfer to the loaf pan, top with sliced banana if desired and bake for 45-55 minutes or until a toothpick comes out clean.
  • Let cool before cutting into slices and serving.
