I’m not upset that it’s September; I just can’t believe that it is! I swear summer was only three weeks long and I just graduated high school like yesterday. WHY IS TIME GOING BY SO FAST?

On the bright side, it’s September which means mornings are getting more crisp and I’m waiving my pumpkin flag high. Bring all the pumpkin flavored foods this way and keep them coming til January 1st!

Also, I should appologize in advance about all the pumpkin flavored crap I’m about to publish on my blog. Every year I tell myself that I should focus more on other fall flavors like chai or apple but let’s be honest, it’s never going to better than pumpkin!

Before I go all pumpkin on you, I thought I would share some none-pumpkin but still ah-mazing recipes that I made!

Pumpkin Blondies – Gluten and Dairy-Free

Pumpkin Blondies – Gluten and Dairy-Free

Ingredients

  • 1/2 c almond flour
  • 1/2 c gluten-free baking flour or gluten-free oat flour
  • 1/2 c coconut sugar
  • 1/2 c granulated Swerve or can sub for all coconut sugar
  • 1/4 c pumpkin puree
  • 2 tbsp coconut oil, melted
  • 1 egg, large
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
    topping
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon
  • 3/4 tsp coconut oil, melted
  • melted coconut butter for drizzling (optional)

Instructions

  1. Preheat oven to 350 F and prepare a 6x6 inch pan with parchment paper. Leave an overhang for easy removal.
  2. In a large mixing bowl, stir together the flours, coconut sugar, granulated Swerve, spices, baking powder and baking soda until combined. Add in the egg, pumpkin puree and coconut oil and mix until well combined. The mixture will be very thick. Use a rubber spatula to transfer the batter to the baking pan. Bake for 15 minutes.
  3. Meanwhile, stir together the coconut sugar, cinnamon and coconut oil topping. Mixture should resemble sand. Remove pan from the oven and sprinkle the mixture over the top. Return to bake for another 10-15 minutes. When done, center should still be soft but a toothpick will come out clean.
  4. Let cool and cut into 9 squares. Drizzle with coconut butter if desired.
