Simple Vegan Cheesecake with Fresh Peaches

This simple vegan cheesecake will be the last dairy-free cake you will ever need. This super simple cake is made without cashews, tofu and [almost] without baking! The fresh peaches really take this creamy vegan dessert to entirely new level…yes please!

Vegan cheesecake sounds like an oxymoron, right? I mean, how can a cheese based dessert possibly be dairy-free? My thoughts exactly when I stumbled upon vegan cream cheese. I was terrified to try it for the first time but to my surprise the almond based cream cheese tastes almost identical to regular dairy cream cheese. In fact, I’m not sure if I could tell the difference with a blindfold on. Which got me thinking that I had to try making cheesecake with it.

I love the taste of cashew based cheesecakes but texture is never quite right and not to mention how time consuming it is. And for tofu cheesecakes…well I just don’t like tofu. This cake was everything I was hoping for in a dairy-free cheesecake.

This cheesecake is amazing as a plain and simple cheesecake but adding fresh peaches takes it to whole new level of deliciousness. I highly recommend!

Simple Vegan Cheesecake with Fresh Peaches

A delicious and creamy vegan cheesecake made without cashews or tofu!

Ingredients

    for the crust
  • 1 c almond flour
  • 1/4 c gluten free oat flour
  • 1 tbsp coconut oil, soft
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/8 tsp salt
    for the cheesecake
  • 8oz vegan cream cheese, buy it here
  • 5oz vegan vanilla yogurt, buy it here
  • 3 tbsp granulated sweetener
  • pinch extra fine sea salt
    topping
  • 1 peach sliced,
  • dried rose petals for sprinkling

Instructions

    for the crust
  1. Preheat oven to 350 F and prepare an 8x4" pan (or 6" square) with parchment paper for easy removal.
  2. Place all crust ingredients into a food processor and blend until a dough forms. Press the dough evenly into the bottom of the pan and bake for 8-10 minutes. Let cool.
    for the cheesecake
  1. Place all cheesecake ingredients into a mixing bowl. Beat using a hand held mixer until well combined. Transfer to pan and smooth out in one even layer. Chill overnight or for at least 12 hours.
  2. Use a sharp knife to cut into slices, rinse clean between slicing. Top with fresh peach slices and sprinkle with dried rose petals if desired.
