This gluten-free, high protein banana bread is popping with lemon flavor and poppy seeds (see what I did there) and is sweetened to perfection without using refined sugar.


I have a confession to make. This is actually the first time I’ve ever made anything with poppy seeds. I usually just bake with ingredients that are already in my cabinet and poppy seeds just aren’t something I usually have hanging around. And for some reason I thought they were hard to find. This is so embarrassing but I thought you could only find them at a health food store or a special seed store or something. I WAS SO WRONG! I found these poppy seeds for $3.49 in the seasoning isle at Target!

Healthy Lemon Poppy Seed Banana Bread

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Healthy Lemon Poppy Seed Banana Bread

Healthy Lemon Poppy Seed Banana Bread is High in Protein and Made Gluten-Free!

Ingredients

  • 3 bananas, ripe
  • 2 eggs, large
  • 1/4 c egg whites
  • 1/4 c unsweetened almond milk
  • 1 tbsp coconut oil, melted
  • 4 tbsp lemon juice
  • zest of 1 small lemon or 1/2 large lemon
  • 1 c gluten-free oat flour
  • 1/4 c granulated erythritol or coconut sugar
  • 64g vanilla protein powder PEScience 30% OFF code PBCHOCO
  • 3 tbsp poppy seeds
  • 2 tbsp baking powder
  • 1 tbsp baking soda

Instructions

  1. Place the bananas, eggs, egg whites and milk into a mixer and beat for 1 minute. Add in the coconut oil, lemon juice and zest. Continue mixing until incorporated. Add in the remaining ingredients and mix until a batter forms.
  2. Pour the batter into a 9x5 inch loaf pan lined with parchment paper and bake for 38-40 minutes at 350 F.
  3. Let cool before cutting into slices and serving.
  4. ENJOY!

Notes

*You may sub oat flour for any flour of choice. Coconut oil may be subbed for olive oil or butter.

Healthy Cinnamon Apple Banana Bread

Healthy High Protein Cinnamon Apple Banana Bread made gluten-free.

Ingredients

  • 1 c oat flour
  • 3 bananas, overly ripe
  • 2 small apples, peeled and chopped
  • 3 eggs
  • 64g vanilla protein powder PEScience 30% off code PBCHOCO
  • 1 tbsp coconut oi, melted
  • 2 tbsp ground flax
  • 3 packets stevia or sweetener of choice
  • 2 tbsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  1. Preheat oven to 350F and prepare a loaf pan with parchment paper.
  2. Place the apples into a blender or food processor on high until finely chopped and then transfer apples to a mixer. Add in the eggs and bananas. Beat until fluffy.
  3. Add in the oat flour, protein, cinnamon, stevia, baking soda, baking powder and flax. Mix just until combined. Add the coconut oil and continue mixing until combined.
  4. Pour the batter into the prepared pan and bake for 44-46 minutes. Let cool before cutting into pieces and serving.

Healthy Whole Wheat Chocolate Chip Banana Bread

Healthy whole wheat banana bread made sugar free and oil free!

Ingredients

  • 1 c whole wheat flour
  • 64g protein powder (I used PEScience Peanut Butter Cookie 30% OFF code PBCHOCO)
  • 3 medium bananas, ripe
  • 2 eggs
  • 1/4 c unsweetened almond milk
  • 1/4 c sugar-free maple syrup
  • 1 tsp vanilla extract
  • 1 tsp uncut stevia or sweetener of choice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 c sugar-free chocolate chips

Instructions

  1. Preheat oven to 350F and prepare a loaf pan with non-stick spray.
  2. Beat the eggs, milk, maple syrup, vanilla and stevia until fluffy.
  3. In a separate bowl, stir together the flour, protein powder, baking soda and baking powder.
  4. Add your dry ingredients to your banana mixture and stir until combined. Fold in chocolate chips.
  5. Pour batter into prepared pan and bake for 38-40 minutes.
  6. Let cool before serving.
