I’ve seen a photo floating around Pinterest for some time now of a three layered dessert called a “cavity bar”. I pinned the image so long ago I can’t find it anymore but luckily my food memory is so powerful the image has been burnt into my memory for all eternity. The first layer was a cookie bar followed by a layer of thick chocolate and topped with a layer of chocolate chip cookie dough–and from what I can remember they were definitely not “healthy” by any means.


I’m not one to knock sugar filled desserts. I one hundred percent believe that real desserts are okay for the body (and even better for the mind) as long as it’s accompanied by a balanced lifestyle. Which is great for normal people but then there’s people like me who have an undeniable sweet tooth and need to have dessert once or twice sometimes…three times a day. That’s right. That’s why I make my desserts using [mostly] healthy ingredients.

Can we take a moment to admire the layers on these cookie bars. Layer 1: dense and chewy peanut butter cookie loaded with chocolate chips. Layer 2: a simple yet decadent two-ingredients chocolate ganache. Layer 3: sweet and buttery chocolate chip cookie dough. LITERALLY, ALL MY FAVORITE THINGS IN ONE BAR!

Ingredients

    cookie bar layer
  • 1 c natural peanut butter
  • 1/2 c coconut sugar
  • 1 egg, large organic free-range Milk and Eggs
  • 1/2 tsp baking powder
  • 1/4 c dairy-free chocolate chips
    chocolate layer
  • 3/4 c dairy-free chocolate chips
  • 1/3 c unsweetened almond milk
    cookie dough layer
  • 1/2 c vegan butter, soft Milk and Eggs
  • 1/3 c powdered erythritol
  • 1/4 c coconut sugar
  • 1/2 c almond flour
  • 1/2 c gluten free oat flour
  • 1/4 c dairy-free chocolate chips

Instructions

    The cookie bar layer: In a large mixing bowl, beat the peanut butter and coconut sugar together until combined using a handheld mixer. Add in the remaining ingredients and continue mixing until a dough forms. Press the dough evenly into the bottom of an 8x8 inch pan prepared with parchment paper. Bake for 9-11 minutes at 350F. Let cool.
    The chocolate layer: Once the cookie bars have cooled, place the chocolate chips into a glass bowl. Heat the almond milk in the microwave or on a stove top just before it reaches a boiling point (about 40 seconds in the microwave). Pour the milk over the chocolate chips and let sit for 2 minutes. After the two minutes, stir well until you have a thick chocolate ganache. Pour the ganache over the cookie bars and chill for 1 hour.
    For the cookie dough layer: In a mixing bowl, beat the butter and the powdered erythritol until light and fluffy using a handheld mixer. Add in the remaining ingredients (except chocolate chips) and mix until well combined. Fold in chocolate chips. Drop the cookie dough in chunks oven the chocolate. Use a rubber spatula to smooth. Chill for at least 30 minutes before cutting into 20 bars and serving.

Notes

*For a lower fat and sugar content use light butter and sugar-free chocolate. Coconut sugar can be replaced with a granulated erythritol. Comment any other substitution questions. 🙂

With it’s minimal ingredients, you can whip up this gluten-free apple bread in one bowl and in under 10 minutes it’s ready to pop into the oven. Did I mention I made this bread without using butter or refined sugar? Here’s what I used to make the bread:

  • eggs
  • unsweetened applesauce
  • coconut sugar
  • coconut oil
  • gluten-free flour
  • granny apples
  • blueberries
  • vanilla
  • salt
  • baking powder
  • baking soda
  • cinnamon

THAT’S IT! That’s all you need to make this unbelievably delicious (and like soooo moist) gluten-free, dairy-free apple bread with blueberries.

Gluten-Free Apple Bread with Blueberries

Ingredients

  • 2 eggs, room temperature
  • 1 c unsweetened applesauce
  • 1/4 c coconut oil, melted
  • 1/2 c coconut sugar
  • 1 + 1/4 c gluten-free baking flour
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch sea salt
  • 2 Granny Smith apples
  • 1/4 c blueberries

Instructions

  1. Preheat oven to 350 F and prepare a loaf pan or dish with non-stick spray.
  2. Peel and finely chop one of the apples, set aside.
  3. In a large mixing bowl, beat the eggs, applesauce and coconut oil together using a hand held mixer until light and fluffy (about 1 minute). Ultimately you can do this by hand using a whisk, just be sure the eggs are well beaten. Add in the coconut sugar and vanilla and mix until combined.
  4. Next add the chopped apples, baking flour, salt, baking soda and powder. Fold the batter until no dry spots remain. Don't over mix if you can help it.
  5. Pour the batter into the prepared dish or pan.
  6. For the last apple, cut into thin slices and arrange them on top of the batter. Top with blueberries and bake for 50-60 minutes. Just until a toothpick comes out clean.

It definitely doesn’t feel like Spring in Southern California right now. In fact, it’s pouring rain which is why I’m baking away this raining Wednesday morning and dreaming about the sunshine. I’m really loving all the Spring flowers and fruits! I’m sorry I’ve been slacking on the chocolate posts lately but I just can’t get enough lemon and fruit flavors and these raspberry cake donuts are really doing the trick!

Baked Lemon Raspberry Cake Donuts

Ingredients

    for the raspberries
  • 3/4 c raspberries
  • 1/2 tbsp granulated zero calorie sweetener Swerve
  • 1 tsp tapioca flour
  • 1 tsp lemon juice
  • 1 tbsp water
    for the donuts
  • 3/4 c gluten-free baking flour
  • 32g vanilla protein powder Pescience 30% off code PBCHOCO
  • 1 banana, ripe
  • 1/4 c almond milk
  • 2 eggs, large
  • 2 tsp coconut oil, melted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • pinch sea salt
  • zest and juice from 1/2 lemon
    for the glaze
  • 1/2 c confectioners zero calorie sweetener Swerve
  • juice from raspberries
  • 1 tbsp water

Instructions

  1. In a mixing bowl, toss together all raspberry ingredients and let sit for 20 minutes.
  2. Preheat oven to 350 F and prepare a standard donut pan with non-stick spray. In a mixing bowl, whisk together the (mashed) banana, eggs, almond milk, oil, zest, juice and vanilla until smooth. Add in the flour, protein, sweetener, baking soda and powder and stir until combined.
  3. Drain raspberries from juice (save the juice for the glaze) and fold them carefully into the batter. Don't over mix. Fill 7 donut molds with batter and bake for 12-14 minutes. Let cool.
  4. Once donuts are cooled, mix together the saved juice (about 1-2 tbsp) and confectioners sweetener until smooth. If glaze is too thick, add another tablespoon of water. Spoon glaze over the donuts or dip each donut into the glaze.
