Fudgy Oreo Vegan Brownies with Peanut Butter Swirl

Deliciously healthy, vegan brownies that are swirled with creamy peanut butter and loaded with Oreo cookies! These insanely delicious Oreo brownies are extra fudgy, made vegan, gluten-free and overall healthy!

Lets talk about Oreos [and you guys this is not an ad…I just really love Oreos but Nabisco if you are reading, I WOULD LOVE TO PARTNER ;)]. First of all, did you know Oreos are suitable for vegans? That’s right! They are completely free from animal products, however, if you are strict vegan, I have read that they may or may not have come in contact with milk. So that’s something to keep in mind. Oreos are not gluten-free though so if you are looking to make a gluten-free version of these brownies, be sure to use Glutinos cookies or your favorite gluten-free brand.


When I first set out to make these brownies, I had no intention of adding a sweet and creamy swirl of peanut butter but as I was nearing the end and about to toss these bad boys into the oven, I impulsively dropped a few tablespoons of peanut butter over the batter and swirled it around before finishing these brownies with mini Oreo thins. AND I REGRET NOTHING! These brownies are literally the best I’ve ever had! The fudge factor on these brownies are beyond compare!

Fudgy Oreo Vegan Brownies with Peanut Butter Swirl

Yield: 9

Fudgy Oreo Vegan Brownies with Peanut Butter Swirl

Ingredients

    for the brownies
  • 1/4 c natural peanut butter
  • 2 tbsp maple syrup
  • 100g dairy-free dark chocolate
  • 2 tbsp coconut oil, melted
  • 2 flax eggs (2 tbsp flax meal + 6 tbsp water)
  • 1 tsp vanilla extract
  • 3/4 c almond flour
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
    for the topping
  • 10 mini Oreos, in pieces *use gluten-free cookies if necessary
  • 3 tbsp natural peanut butter

Instructions

  1. Preheat oven to 350 F and prepare a 6x6 inch pan with parchment paper both ways and leave an overhang for easy removal.
  2. First, prepare the flax egg by stirring together flax meal and water and letting sit for 10 minutes.
  3. Next, in a microwave safe bowl, melt the chocolate and peanut butter together. Stir in the maple syrup, coconut oil and vanilla and stir until smooth.
  4. In a large mixing bowl, stir together the almond flour, cocoa powder, salt and baking soda. Add in the chocolate mixture and flax egg and stir until a thick batter forms. Transfer batter to the prepared pan.
  5. Next, drop dollops of peanut butter over the batter and use a knife to swirl them together. Top with Oreo pieces and bake for 14-16 minutes. Do not over bake. The brownies will still be soft when you take them out of the oven but that's okay. Let cool completely at room temperature then chill for 1 hour before cutting into squares and serving. ENJOY!

Vegan cheesecake sounds like an oxymoron, right? I mean, how can a cheese based dessert possibly be dairy-free? My thoughts exactly when I stumbled upon vegan cream cheese. I was terrified to try it for the first time but to my surprise the almond based cream cheese tastes almost identical to regular dairy cream cheese. In fact, I’m not sure if I could tell the difference with a blindfold on. Which got me thinking that I had to try making cheesecake with it.

I love the taste of cashew based cheesecakes but texture is never quite right and not to mention how time consuming it is. And for tofu cheesecakes…well I just don’t like tofu. This cake was everything I was hoping for in a dairy-free cheesecake.

This cheesecake is amazing as a plain and simple cheesecake but adding fresh peaches takes it to whole new level of deliciousness. I highly recommend!

Simple Vegan Cheesecake with Fresh Peaches

A delicious and creamy vegan cheesecake made without cashews or tofu!

Ingredients

    for the crust
  • 1 c almond flour
  • 1/4 c gluten free oat flour
  • 1 tbsp coconut oil, soft
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/8 tsp salt
    for the cheesecake
  • 8oz vegan cream cheese, buy it here
  • 5oz vegan vanilla yogurt, buy it here
  • 3 tbsp granulated sweetener
  • pinch extra fine sea salt
    topping
  • 1 peach sliced,
  • dried rose petals for sprinkling

Instructions

    for the crust
  1. Preheat oven to 350 F and prepare an 8x4" pan (or 6" square) with parchment paper for easy removal.
  2. Place all crust ingredients into a food processor and blend until a dough forms. Press the dough evenly into the bottom of the pan and bake for 8-10 minutes. Let cool.
    for the cheesecake
  1. Place all cheesecake ingredients into a mixing bowl. Beat using a hand held mixer until well combined. Transfer to pan and smooth out in one even layer. Chill overnight or for at least 12 hours.
  2. Use a sharp knife to cut into slices, rinse clean between slicing. Top with fresh peach slices and sprinkle with dried rose petals if desired.

Ingredients

  • 3 bananas, ripe
  • 3 eggs, large
  • 1/2 c unsweetened almond milk
  • 1/4 c coconut oil, melted
  • 1 1/4 c Gluten-Free Baking Flour
  • 1/4 c Granulated Zero Calorie Sweetener
  • 64g vanilla protein powder
  • 2 tsp almond extract
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp baking soda
  • pinch sea salt
  • 2 tbsp poppy seeds
  • 1/4 c slivered almonds

Instructions

  1. Preheat oven to 350 F and prepare 12 muffin molds with non-stick spray or cupcake liners.
  2. In a mixer, beat the bananas and eggs for 1 minute. Add in the melted coconut oil, almond extract, vanilla extract and milk and continue mixing until incorporated. Add in the remaining dry ingredients (except slivered almonds) and stir until no dry spots remain.
  3. Distribute the batter between 12 of the cupcake liners and top with almond slivers.
  4. Bake for 17-20 minutes. Let cool before serving.
