Paleo Brownies with Chocolate Hazelnut Swirl

Paleo Brownies with Chocolate Hazelnut Swirl

The last recipe you will ever need for paleo brownies! These boyfriend approved brownies are so decadent and fudgy they will leave you licking your fingers clean and begging for more–speaking from experience here.

Yum

I’ve been a healthy dessert connoisseur for a few years now and I’ve probably made a hundred different “healthy” brownie recipes and I can confidently say that none of them compare to this brownie recipe. First of all, these brownies do not taste healthy–like at all! My boyfriend stays 10 feet away from any food that’s labeled “healthy” and when he tried these, he had no idea I made them using all paleo and gluten-free ingredients! Secondly, the fudge factor on these are just insane! INSANE! Nothing can really describe it so I suggest you try it for yourself. Go ahead, you deserve it! Make yourself a batch of these brownies asap–I promise you won’t regret it!

Rustic Gluten-Free Galette with Dark Sweet Cherries

Rustic Gluten-Free Galette with Dark Sweet Cherries

This delicious cherry gluten-free galette tastes just as wonderful as cherry pie and it so much easier to make!

Yum

I really love galettes because they are essentially pies for the simple folk. The best part about them? The more you mess them up, the more rustic they start to look. Basically, this is a fool proof recipe that tastes just as good as a well constructed pie. If you are looking for a quick and easy recipe that’s sure to impress, look no further than a rustic galette. I promise you this dessert will wow everybody.

Yum

Lets talk cherries. The cherries are the easiest part of this delicious galette recipe. Soak them in sweetener, lemon juice and tapioca flour for 20-25 minutes before you dump them in your galette. That’s all! No pre-cooking required.

What’s in the dough? I know, I know this galette recipe calls for grass fed butter and I don’t often use butter in my recipes but the crust will taste so much better with butter, just trust me. The butter may be replaced with vegan butter or solid coconut oil. If you using coconut oil, know going into it that the dough will not be as moldable as if you were using butter or ghee. Using coconut oil will make the crust difficult to fold.

If you love pie as much as I do then you will love some of the recipes below.

Rustic Cherry Gluten-Free Galette

Rustic and simple gluten free cherry galette.

Ingredients

    Crust
  • 1/2 c gluten-free baking flour
  • 2 tbsp butter, see notes for replacements
  • 3-4 tbsp water
  • pinch sea salt
  • 1 tbsp granulated sweetener
    Filling
  • 1 c fresh or frozen pitted cherries
  • 1 tbsp granulated sweetener
  • 1 tbsp lime juice or lemon
  • 1/2 tbsp tapioca flour
    Other
  • almond milk for brushing

Instructions

  1. In a mixing bowl, stir together the cherries, sweetener, lime juice and tapioca flour until everything is well coated. Let sit for 15-20 minutes.
  2. Meanwhile prepare your dough by placing all ingredients into a food processor and pulsing just until the dough comes together. If too wet, add a tsp of flour and pulse until dough comes together.
  3. Roll the dough out a on piece of parchment paper dusted with gluten free baking flour until it's about 1/8 inch in thickness. Try and get as close to a circle as you can but it doesn't have to be perfect.
  4. Dump the cherry mixture into the center of the dough leaving about 1 inch of room around the edges. *If you used frozen cherries and had a lot of juices release while the mixture was sitting, drain out the liquid before dumping the cherries into the center of the dough.
  5. Fold the edges inward. Brush the crust with almond milk and bake for 30-40 minutes at 350 F.

Notes

*butter can be replaced with ghee, vegan butter or solid coconut oil but keep in mind the texture will change

Gluten-Free Apple Bread with Blueberries

Ingredients

  • 2 eggs, room temperature
  • 1 c unsweetened applesauce
  • 1/4 c coconut oil, melted
  • 1/2 c coconut sugar
  • 1 + 1/4 c gluten-free baking flour
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch sea salt
  • 2 Granny Smith apples
  • 1/4 c blueberries

Instructions

  1. Preheat oven to 350 F and prepare a loaf pan or dish with non-stick spray.
  2. Peel and finely chop one of the apples, set aside.
  3. In a large mixing bowl, beat the eggs, applesauce and coconut oil together using a hand held mixer until light and fluffy (about 1 minute). Ultimately you can do this by hand using a whisk, just be sure the eggs are well beaten. Add in the coconut sugar and vanilla and mix until combined.
  4. Next add the chopped apples, baking flour, salt, baking soda and powder. Fold the batter until no dry spots remain. Don't over mix if you can help it.
  5. Pour the batter into the prepared dish or pan.
  6. For the last apple, cut into thin slices and arrange them on top of the batter. Top with blueberries and bake for 50-60 minutes. Just until a toothpick comes out clean.
