Healthy Chunky Monkey Oatmeal Pancakes

These healthy chunky monkey oatmeal pancakes are made gluten-free, high in protein and refined sugar-free!

Ingredients

  • 2 bananas, ripe
  • 2 eggs, large
  • 64g protein powder PEScience 30% off code: PBCHOCO
  • 1/2 c unsweetened almond milk
  • 1/2 c gluten-free rolled oats
  • 1/4 c gluten-free oat flour
  • 1 tbsp peanut butter Nuts 'N More
  • 2 tbsp sugar-free chocolate, chopped
  • 1 tsp baking soda
  • 1 tsp baking powder
    Topping (optional)
  • banana pieces
  • peanut butter
  • chopped chocolate

Instructions

  1. In a large bowl, mash the bananas using a fork. Add in the eggs, almond milk and peanut butter. Whisk or use a hand mixer until well combined. Place the flour, oats, protein, baking soda and baking powder into a blender or food processor and blitz until combined. If you don't want chunky oats in your pancakes, blend until smooth. Dump the dry ingredients into the wet and mix until incorporated. Fold in chocolate pieces.
  2. Now to cook the pancakes! Prepare a skillet or pancake pan with non-stick spray and turn on medium-low heat. Cook pancakes 1/4 cup at a time until bubbles start to pop, flip and cook the other side until golden brown. Repeat until you have used all the batter.
  3. Finish pancakes with optional toppings and serve!

Yes, another banana bread recipe. I don’t know about you but I can never pass up an opportunity to make banana bread when my bananas start to get overly ripe. I always tell myself I’m going to make something else (and maybe one day I will) but not this time. This time I made a  banana bread flavor I haven’t had in a long time–chocolate! This isn’t just any chocolate banana bread recipe, this banana recipe has double the chocolate in it and is topped with a rich dark chocolate frosting.

Healthy Double Chocolate Banana Bread with Two-Ingredient Chocolate Frosting Made Gluten-Free, Refined Sugar-Free.

Ingredients

  • 3 bananas, ripe
  • 3 eggs, large
  • 1 c gluten-free oat flour
  • 32g chocolate protein PEScience 30% code PBCHOCO
  • 1/4 c unsweetened cocao powder
  • 1/4 c coconut sugar or granulated erythritol
  • 1/4 c unsweetened almond milk
  • 1/4 c chopped sugar-free dark chocolate, melted
  • 2 tsp baking powder
  • 1 tsp baking soda
  • pinch sea salt
    Frosting
  • 1 sugar-free chocolate bar, chopped (about 100g)
  • 1 tbsp unsweetened almond milk
    Topping
  • 2 tbsp cocao nibs

Instructions

  1. Preheat oven to 350 F and prepare two small loaf pans or 1 large with parchment paper and set aside.
  2. In a mixer, beat the eggs, bananas and milk until fluffy (about 20 seconds). Add in the melted chocolate and continue mixing until incorporated. Add in the remaining dry ingredients and mix until combined. Distribute the batter between the two loaf pans and bake for 35-40 minutes. Let cool completely.
  3. Once cooled, melt the chocolate for the frosting. Once melted, stir in the almond milk until smooth. Frost the loaves and top with cocao nibs.
  4. ENJOY!

These candy bars are layered with cashew nougat, sticky date caramel and covered in decadent chocolate. Be careful though, these gluten-free candy bars are highly addictive!

My favorite “healthy” dessert in the world is a raw candy bar loaded with nuts and layered with date caramel. If you haven’t noticed, I try and incorporate some sort of date caramel goodie into a blog post every month or so. I’m obsessed to say the least and if you haven’t tried a raw caramel slice of some sort, don’t wait any longer. Date filled desserts are worth all the calories–and there’s a lot them!


Healthy Caramel Peanut Nougat Candy Bars

Healthy Caramel Peanut Nougat Candy Bars

Healthy Nougat Date Caramel Candy Bars made gluten-free and vegan!

Ingredients

    Nougat Layer
  • 1 1/2 c raw cashews
  • 1/2 c unsweetened shredded coconut
  • 2 tbsp coconut oil, melted
  • 3 tbsp agave or sticky syrup of choice
  • 32g vanilla protein powder PEScience 30% off code PBCHOCO or 1/3 c coconut flour for vegan
  • Caramel Layer:
  • 12 medjool dates, pitted
  • 1/4 c natural peanut butter
  • 2 tbsp agave or sticky syrup of choice
    Other
  • 1/4 c peanuts, unsalted
    Chocolate
  • 1 c dark chocolate chips, vegan if necessary
  • 1 tsp coconut oil

Instructions

  1. For the nougat layer, place all the ingredients into a food processor and blend until a dough forms. Press the dough into the bottom of a loaf pan lined with parchment paper and place in the freezer while you prepare your caramel layer.
  2. For the caramel layer, place all caramel ingredients into a food processor and blend until smooth. You will want to stop and scrape the sides as you go. Evenly press the caramel layer over the nougat layer. Sprinkle with peanuts. Place in the freezer for 1 hour.
  3. Remove from the freezer and cut into bars. Melt chocolate and coconut oil together until smooth. Place each bar on a piece of parchment paper and spoon chocolate over each bar, starting at the edges and smoothing over the top and the sides until completely covered.
  4. Return to the freezer until chocolate hardens. Enjoy!

Notes

***These bars are extremely high in calories and fat. Although they are made with healthy ingredients, too much of anything is never a good thing. **To reduce calories, use a sugar-free maple syrup in place of the agave. *Store in an airtight container in the freezer. Let thaw 10 minutes before serving.
