Healthy Jalapeño Avocado Deviled Eggs

 

These Keto friendly Jalapeño Avocado Deviled Eggs are the perfect party appetizer! These spicy deviled eggs are made paleo, gluten-free and dairy-free for a delicious avocado packed snack!


Having trouble peeling those eggs? Pro Tip: Peel them in a bowl of water!!! I like to remove from my eggs from the boiling water and immediately transfer them to a bowl of cold water. Then after about 10 minutes of cooling, I peel them in the water and shells slip right off and you are left with perfect eggs!

I absolutely love spicy food so it was a no brainer for me to add some jalapeño to these eggs. If you don’t love the burn like I do, then omitting the jalapeño or subbing it with bell pepper or celery will also taste delicious.

Healthy Jalapeño Avocado Deviled Eggs

Yield: 12

Ingredients

  • 1 large avocado, ripe
  • 6 eggs, hard boiled
  • 1 jalapeño, minced
  • 2 tbsp dijon mustard
  • juice from 1/2 lime
  • pinch sea salt
  • 1/2 tsp paprika
  • 1/4 tsp black pepper

Instructions

  1. Remove shells from hard boiled eggs and cut eggs in half (long ways). Remove yolks and place them into a medium size bowl.
  2. Rise egg whites to remove any extra yolk that remains, pat dry with a paper towel then place them on serving platter or dish and set aside.
  3. Cut avocado in half and remove pit and peel. Place the avocado into the bowl with the yolks. Add in the remaining ingredients and mix until smooth and ingredients are well combined. Ultimately, you can place all the ingredients into a food processor and blitz until smooth.
  4. Scoop a spoonful of the avocado mixture into each egg white half. Top with a dash of paprika and jalapeño slices. Enjoy immediately!

Notes

These deviled eggs taste and look best if served immediately.

Healthy 4-ingredients blueberry syrup. Great for topping pancakes, ice cream, oatmeal and more. Made gluten-free, vegan, paleo and under 5 minutes.

Ingredients

  • 1 c fresh or frozen blueberries
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • juice from 1 lemon

Instructions

  1. Place all ingredients into a sauce pan on medium-low heat.
  2. Cook for 4-5 minutes (stirring occasionally) and serve over pancakes.
  3. Store in a mason jar or airtight container in the fridge for up to 7 days.

These super decadent blueberry chocolate fudge bars are made healthy using whole food ingredients! Did I mention they are vegan, gluten-free and paleo? This way everyone can enjoy them! 🙂


 

 

The blueberry bars are topped with a super fudgy frosting made using only a few ingredients and magically comes together in seconds! This fudge frosting is a recipe you can reuse again and again!

 

 

Although fresh blueberries are delicious, I used freeze dried blueberries for this recipe. I found them at Trader Joe’s for a reasonable price.

 

 

I sprinkled these bad boys with more crushed freeze dried blueberries. Freeze dried fruit is my new favorite food to bake with. It literally took all my will power not to eat this entire stack… THEY ARE SO GOOD THOUGH.

Healthy Blueberry Chocolate Fudge Frosted Bars

A Berry-Delicious Chocolate Fudge Treat Made Healthy!

Ingredients

    Blueberry Bars
  • 1/2 c brown rice flour or oat flour
  • 1/2 c finely ground almond flour
  • 32g vanilla protein powder (PEScience 30% OFF code PBCHOCO)
  • 2 tbsp granulated sugar replacement (Swerve)
  • 3 tbsp coconut oil, melted (Better Body Foods)
  • 3 tbsp unsweetened applesauce
  • 1/2 c freeze dried blueberries (not dehydrated)
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
    Fudge Frosting
  • 1/2 c sugar-free chocolate chips (dairy-free if necessary)
  • 2 tbsp sugar-free maple syrup or
  • 1 tbsp coconut oil
  • 2 tbsp sugar-free confectioners sugar (Swerve)

Instructions

  1. Preheat oven to 325F and prepare an 8x8 inch baking pan with parchment paper.
  2. Place the freeze dried berries into a food processor until a powder forms. Add the remaining dry ingredients (flours, protein powder, sugar, baking soda and baking powder) and mix until incorporated.
  3. Add the melted coconut oil and applesauce and continue blending until all ingredients are incorporated and a dough forms.
  4. Press dough evenly into the bottom of your prepared baking pan. Bake for 7 minutes. Remove from oven and let cool completely.
  5. Once cooled, melt chocolate chips and coconut oil together. Stir in maple syrup and then powder sugar until a frosting forms.
  6. Spread frosting evenly over blueberry layer. Top with freeze dried blueberry crumbles if desired and place in the freezer for 15 minutes for chocolate to set. Cut into squares and serve.

Notes

All sugar-free ingredients can be replaced with it's full sugar versions, however, nutrition facts will change.
