Unbelievably healthy pancakes loaded with peanut butter and high in protein to give your morning the kick start it needs!

Happy National Peanut Butter Day! When I woke up this morning, I realized what day it was by the flood of peanut butter posts on Instagram. You would think I would be more conscious of this day since my job revolves around peanut butter but I’m actually pretty terrible about planning those days in advance. Although, I am pretty good at whipping together a recipe last minute and still participate in this national day!


Healthy Peanut Butter Pancakes

Healthy High Protein Peanut Butter Pancakes made Gluten-Free!

Ingredients

  • 1/2 c gluten-free oat flour or flour of choice
  • 32g protein powder PEScience 30% OFF code PBCHOCO
  • 1/4 c almond milk
  • 3 tbsp unsweetened applesauce
  • 2 tbsp natural peanut butter Nuts 'N More
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch salt
  • stevia to taste

Instructions

  1. In a mixing bowl, whisk together the eggs, almond milk and applesauce. Add in the dry ingredients and mix until combined. Stir in peanut butter until incorporated.
  2. Cook pancakes 1/4 cup at a time in a skillet or pancake pan prepared with non-stick spray over medium-low heat until bubbles pop. Flip and cook the other side until golden brown.
  3. Repeat until you have used all the batter.

As much as I love winter fruit, I’ve been thinking about summer berries a lot lately. Thankfully it’s still easy to find delicious blueberries even in December. Yesterday, I had a lazy day memorizing lines for play I’m doing in February and these pancakes were perfect for my day at home.

The Best Ever Healthy Blueberry Pancakes

Fluffy pancakes bursting with blueberries--The best ever healthy blueberry pancakes made gluten-free and high in protein.

Ingredients

  • 1/3 c gluten-free flour
  • 1 large banana, ripe
  • 1 egg, whole
  • 32g protein powder or dairy-free if necessary PEScience 30% OFF code PBCHOCO
  • 1/4 c almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 c fresh blueberries

Instructions

  1. In a mixing bowl, mash the banana using a fork. Stir in the egg and almond milk until smooth. Add in the remaining dry ingredients and mix until no dry spots remain. Fold in blueberries.
  2. Prepare a skillet or pancake pan with non-stick spray and turn on low heat. Once the skillet is hot, cook pancakes 1/4 cup at a time. Cook about 1 1/2-2 minutes on each side or until golden brown.
  3. Top with more blueberries and serve immediately.

Notes

I like to keep my pancake batter thick to get a fluffy pancake but the thickness will vary depending on the protein you use so keep in mind you may need to add more almond milk if the batter seems too thick.

Healthy Apple Cinnamon Ricotta Pancakes are packed with fresh apples and ricotta cheese making these a perfect breakfast treat.


I’ve been in my new apartment for a month now and I still have yet to set off the smoke alarms. Yay. Looking back on making these pancakes, I still can’t believe I made it through the morning without waking up my neighbors. I’m an oven pro but when it comes to the stove, I’m known for burning things but these apple pancakes have no burn marks in sight!

I bought two giant bags of apples last weekend and I’ve been brainstorming apple treats all week. I woke up this morning and immediately wanted pancakes. So of course I took my craving as an opportunity to use up some of my gala apples.

Ingredients

  • 3/4 c gluten-free flour
  • 32g protein powder
  • 1 apple, peeled and chopped
  • 2 tbsp low fat ricotta cheese
  • 2 eggs
  • 3/4 c almond milk
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Instructions

  1. Place the apple, cheese, eggs and almond milk into a blender on high until smooth. Pour contents into a bowl and add the gluten-free flour, protein, baking soda and baking powder. Whisk until smooth.
  2. Spray a griddle, pancake pan or frying pan with non-stick spray and turn on medium heat.
  3. Cook pancakes 1/4 cup at a time until bubbles form. Flip and cook until golden brown.
  4. Top with apple slices and maple syrup.
