I don’t know about you but the weeks leading up to Christmas, I had holiday cookies for breakfast, lunch and dinner (not to mention the snacks in between). Of course, I’m exaggerating a bit but now that Christmas has come and gone, looking back I can’t seem to see anything but sugar and frosting. Needless to say, it’s time to get back on track–and keep the cookies to a minimum.

A few tricks to getting perfectly fluffy scrambled egg whites:
- always cook your eggs on low heat
- never stop stirring
- remove from heat just before they are finished cooking (eggs cook so quickly that they will continue to cook even after removed from heat)
- use an electric hand mixer to fluff the egg whites before cooking

Simple easy and delicious! Healthy Spinach Tomato Egg White Toast. This 2-minute toast recipe is a breakfast game changer; using minimal whole food ingredients, this recipe is perfect for the person on the go!
Ingredients
- 2 slices organic sprouted bread (I used Trader Joe's sprouted, flourless, whole wheat berry bread)
- 1/2 c organic cage free egg whites
- 1 c organic spinach
- 4 slices roma tomato (about 1/2 tomato)
- 1 tsp chia seeds
- pinch freshly ground pepper
- pinch Himalayan salt
Instructions
- Place toast in toaster on desired setting (I like mine dark!) while you prepare your spinach and eggs.
- In a small skillet prepared with coconut oil non-stick spray, cook spinach over low heat just until wilted (about 1 minute). Use a spatula to constantly stir it to keep from burning. Remove spinach and set aside.
- In the same pan, continue with low heat and place your egg whites (be sure to shake them up if using from a carton and if using from the shell, use a whisk to lightly beat) into the center of the pan. Immediately start stirring the eggs using a spatula. Cook and stir for about one minute or until egg whites are almost done cooking. The remaining heat in the eggs will continue to cook them.
- Assemble toast with spinach, egg whites and tomato slices. Top with chia seeds, pepper and salt.
