I don’t know about you but the weeks leading up to Christmas, I had holiday cookies for breakfast, lunch and dinner (not to mention the snacks in between). Of course, I’m exaggerating a bit but now that Christmas has come and gone, looking back I can’t seem to see anything but sugar and frosting. - always cook your eggs on low heat
- never stop stirring
- remove from heat just before they are finished cooking (eggs cook so quickly that they will continue to cook even after removed from heat)
- use an electric hand mixer to fluff the egg whites before cooking
