S’mores Peanut Butter Cookies with Pretzels (gluten-free)

Craving salty, sweet, crunchy, ooey or gooey? Don’t worry. It’s all here. S’mores peanut butter cookies are thick, chewy, soft, and made gluten-free! These cookies are your campfire dreams come true…no open fire needed. 🙂

Combining all my favorites into one dessert is what I do best. Obviously, I love peanut butter and chocolate but I’m also a sucker for adding pretzels into my creations (that sweet and salty though) and anything s’mores flavored is literally the best! So when The Feed Feed and Ghirardelli came together to hold a S’mores Contest I knew exactly what I wanted to make.

These peanut butter cookies are loaded with peanut butter, gluten-free mini marshmallows, Ghirardelli dark chocolate squares and for the crunch I used gluten-free pretzel sticks instead of graham crackers. They are simple to make and hands down, the best cookie you will ever have!

I was able to cut down on the sugar in these peanut butter cookies by using Swerve Brown Sugar and Swerve Granulated Sweetener!

For all you cookie monsters out there, I compiled a list of some of my favorite cookies on the blog! I hope you enjoy all these healthy cookies as much as I did!

Double Chocolate Sweet & Salty Flourless Cookies

Delicious double chocolate flourless cookies made using gluten-free ingredients with a little bit of sweet and salty in every bite.

Double Chocolate Caramel Stuffed Vegan Cookies

These double cookies are packed with chunks of dark chocolate, stuffed with a rich date caramel and then finished with a flakey sea salt. Deliciously soft chocolate vegan cookies made gluten-free and refined sugar-free.

Big & Chewy Oatmeal Orange Cookies with Orange Citrus Icing

Big and chewy healthy oatmeal cookies with orange citrus icing–it’s quite a mouthful but every word is extremely important in the description of these cookies. I debated whether or not to add gluten-free, refined sugar-free, high in protein with a vegan option to the title. What do you think? Probably best the way I left it. Now you know that besides these cookies being big, chewy, healthy oatmeal cookies with orange citrus icing they are also everything else I listed above–and absolutely delicious, of course!

Peanut Butter S’mores Pretzel Cookies (gluten-free)

Peanut Butter S’mores Pretzel Cookies (gluten-free)

  • ½ c peanut butter, natural
  • ½ c butter, room temp
  • ½ c granulated sugar replacement (Swerve or Truvia)
  • ¼ c brown sugar replacement (Swerve)
  • 1 egg, large
  • 1 ¼ c gluten-free baking flour
  • 1 tsp vanilla extract
  • ⅛ tsp salt
  • 8 Ghirardelli dark chocolate squares, roughly chopped
  • 1/4 c gluten-free pretzels, roughly chopped
  • 1/4 c gluten-free mini marshmallows, halved

  • In a mixing bowl, stir together the flour, baking soda and salt and then set aside.
  • In a large mixing bowl, using a handheld mixer, cream together the butter, granulated sugar replacement and brown sugar replacement until light and fluffy (about 1-2 minutes). Add in the egg and continue mixing until well combined. Add in the peanut butter and vanilla extract and mix until combined.
  • Slowly add in the dry ingredients and mix until a dough forms. Try not to over mix. Fold in dark chocolate pieces, pretzels and mini marshmallows (leaving a few to top cookies with). Cover and place the freezer for 15 minutes.
  • Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  • Separate the dough into 18 evenly sized balls and top them with remaining chocolate, marshmallows and pretzel pieces. Place them on the baking sheet about 2 inches apart. Bake for 11-14 minutes or until edges are golden brown. Remove from the oven and let cool the baking sheet for 10 minutes before transferring to a wire rack to continue cooling.

These look gorgeous! I can’t wait to start baking again (promised no more before my wedding), and these are going on the list!

Thank you! You are going to love these!!!
