Healthy Granola Yogurt Popsicles

Yogurt, agave, coconut milk, granola and fruit! That’s all you need to make these simple and delicious vegan yogurt popsicles. These popsicles are super versatile and be made to fit most dietary needs and preferences.

Ingredients

  • 1 ⅓ cup non-dairy vanilla yogurt
  • ¼ cup coconut milk full fat
  • 2 tbsp agave
  • cup gluten-free granola
  • 1 kiwi, skin removed and sliced or other furit of choice
  • ¼ cup blueberries or other fruit of choice

Instructions

  • In a bowl, whisk together the yogurt, milk and agave until smooth. 
  • Drop sliced fruit (kiwi) into the bottom of 5 popsicle molds. Layer with yogurt mixture, blueberries (or fruit of choice) and more yogurt leaving ¼inch of room at the top.
  • Finish with granola and press it into the yogurt mixture. Insert a popsicle stick and freeze overnight.

Notes

Store popsicles in an airtight container in the freezer.
