Vegan Apple Cider Waffles

Tangy and sweet, fluffy and crispy apple cider waffles. Just in time for Fall, this vegan waffle recipe is also 100% gluten-free, dairy-free and egg-free so everyone can enjoy!

Equipment

Ingredients

  • 2 cups all purpose gluten-free flour 1:1 or measure for measure
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 cup apple cider
  • ¾ cup almond milk or milk of choice
  • ¼ cup melted vegan butter or vegetable oil
  • 2 tbsp organic brown sugar or granulated sugar of choice

Instructions

  • Prepare a waffle iron with non-stick spray and turn on medium-high heat.
  • In a mixing bowl, stir together the flour, baking powder, cinnamon and salt. In another bowl, whisk together the apple cider, almond milk, melted vegan butter and brown sugar until smooth and then add the wet ingredients to the dry.
  • Stir until no dry spots remain and the batter is thick. Once the waffle iron is hot, use a ladle to pour batter (about 1/3 cup) into the center of the waffle iron.
  • Cook until golden brown, about 3-4 minutes. Repeat until you have used all of the batter. Serve with vegan butter and maple syrup.

Notes

Waffles are best if served immediately or place into a freezer safe zip bag and freeze for up to 3 months. When ready to eat, pop one in the toaster.
