No Yeast Vegan Cinnamon Rolls

The fluffiest, softest and most delicious vegan cinnamon rolls. No yeast needed!

Ingredients

cinnamon rolls

  • cup self rising flour + more for dusting organic if possible
  • 2 tbsp organic cane sugar
  • ¼ tsp salt
  • 2 tbsp vegan butter melted
  • 1 cup almond milk
  • 1 tsp vanilla extract

filling

  • 2 tbsp vegan butter melted
  • ¼ cup organic brown sugar packed
  • ½ tbsp cinnamon

glaze

  • ¾ cup organic powdered sugar sifted
  • tbsp almond milk
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 F° and prepare a baking dish with parchment paper or non-stick spray. 
    In a large bowl, stir together the flour, salt and sweetener. In another bowl, stir together the melted butter, almond milk and vanilla.
  • Add the wet ingredients to the dry and use a rubber spatula to stir until a dough forms. Transfer the dough to a clean floured surface, dust with more flour and knead (adding flour as needed) until dough is smooth, about 10 times.
    Dust a rolling pin with flour and roll dough into a rectangle about 1/4 inch in thickness.
  • In a bowl, stir together the sugar and cinnamon for the filling. Brush the dough with melted butter and sprinkle with cinnamon-sugar mix. Roll dough up (lengthwise) and cut into 12 even pieces. Transfer to the baking dish, brush with melted butter and bake for 15-20 minutes or until edges puff and are golden brown. 
  • Whisk together the glaze ingredients and drizzle over rolls.

Notes

These cinnamon rolls are best if enjoyed immediately. 
For larger rolls, cut into 6 pieces.
