- 2½ cup self rising flour + more for dusting organic if possible
- 2 tbsp organic cane sugar
- ¼ tsp salt
- 2 tbsp vegan butter melted
- 1 cup almond milk
- 1 tsp vanilla extract
filling
- 2 tbsp vegan butter melted
- ¼ cup organic brown sugar packed
- ½ tbsp cinnamon
glaze
- ¾ cup organic powdered sugar sifted
- 1½ tbsp almond milk
- 1 tsp vanilla extract
Preheat oven to 350 F° and prepare a baking dish with parchment paper or non-stick spray. In a large bowl, stir together the flour, salt and sweetener. In another bowl, stir together the melted butter, almond milk and vanilla. Add the wet ingredients to the dry and use a rubber spatula to stir until a dough forms. Transfer the dough to a clean floured surface, dust with more flour and knead (adding flour as needed) until dough is smooth, about 10 times.Dust a rolling pin with flour and roll dough into a rectangle about 1/4 inch in thickness. In a bowl, stir together the sugar and cinnamon for the filling. Brush the dough with melted butter and sprinkle with cinnamon-sugar mix. Roll dough up (lengthwise) and cut into 12 even pieces. Transfer to the baking dish, brush with melted butter and bake for 15-20 minutes or until edges puff and are golden brown.
Whisk together the glaze ingredients and drizzle over rolls.
These cinnamon rolls are best if enjoyed immediately.
For larger rolls, cut into 6 pieces.
