Blueberry Goat Cheese Pizza

This gluten free pizza is loaded with wild blueberries, goat cheese and drizzled with balsamic reduction for just the right amount of sweet and tang! Blueberry balsamic goat cheese pizza is perfect for lunch or pizza night!

Ingredients

  • 16oz gluten free pizza dough or 12" pizza crust homemade or store bought
  • 1 tbsp olive oil
  • 4 oz goat cheese soft
  • 1 cup wild blueberries frozen
  • 1/4 cup fresh basil chopped
  • 4 tbsp balsamic reduction I used store bought
  • 1 cup baby arugula
  • handful goat cheese crumbles optional

Instructions

  • Preheat the oven to 425 F and prepare a baking sheet with parchment paper. *If you are using a pizza stone, place the stone in the oven to heat up.
  • If your dough doesn't already come ready to use, stretch it out until it's roughtly 12 inches in diameter and then drizzle with olive oil and spread a thin layer of the goat chese. Top the goat cheese with blueberries, fresh basil and 2 tablespoons of balsamic reduction.
  • Bake the pizza for 12-15 minutes. Top with fresh baby arugula, remaining balsamic reduction and goat cheese crumbles before serving.
