Ingredients
15ozartisan breador crusty bread of choice
6 eggs
1 1/2cupsalmond milk
1/2cupcoconut sugar
1tsp cinnamon
2tsp vanilla extract
1/8tspsalt
Blueberry Sauce
1cupblueberriesfresh or frozen
2tbspmaple syrup
2tsp lemon juice
Instructions
Cut the bread into 1 inch cubes and place them into a large mixing bowl and set it aside. In another bowl, whisk together the eggs, almond milk, coconut sugar, cinnamon, vanilla and salt and then pour over the bread. Use a large rubber spatula to toss the bread until all the pieces are evenly coated. Prepare your baking dish with non-stick spray and then transer all the soaked bread peices into the dish and then pour the remaining liquid over. Cover and chill overnight or for at least an hour.
Preheat the oven to 350 F. Bake the casserole for 20-25 minutes and golden brown. While the casserole is baking, place the blueberry sauce ingredients into a small pot over medium-low heat, stir and cook for 5-8 minutes. Pour sauce over hot casserole and serve.
