Healthy Banana Bread with Chocolate Chips made in One Bowl

Ingredients

  • 1 cup mashed riped banana about 3 small/medium bananas
  • 3 eggs room temperature
  • cup coconut sugar
  • ¼ cup coconut oil melted
  • ½ cup almond milk room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups all purpose gluten free baking flour or 1:1
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • ½ cup refined sugar free chocolate chips plus more for topping

Instructions

  • Preheat the oven to 375 F and prepare a loaf pan with non stick spray and parchment paper.
  • In a mixing bowl, whisk together the mashed bananas, eggs, coconut sugar, coconut oil, almond milk and vanilla extract until well combined.
  • Add in the gluten free baking flour, baking powder, baking soda and salt and fold until no dry spots remain. Fold in the chocolate chips.
  • Transfer the batter to the prepared pan and top with chocolate chips. Bake for 45-55 minutes. Let cool before serving.

Notes

This banana bread is best if stored at room temperature lightly covered or slices individually wrapped in plastic.
