Healthy Chocolate Chip Cookie Dough Ice Tray Bars {Gluten Free}

Healthy Chocolate Chip Cookie Dough Ice Tray Bars {Gluten Free}

Yield: 10-12 bars

Serving Size: 1 bar

Healthy Chocolate Chip Cookie Dough Ice Tray Bars {Gluten Free}

Ingredients

  • 1/4 c almond flour
  • 1/4 c coconut flour (I used Better Body Foods)
  • 2 tbsp. powdered peanut butter (I used Better Body Foods)
  • 1 scoop protein powder (I used PEScience Cookies and Cream flavor)
  • 1 tbsp. coconut oil (I used Better Body Foods)
  • 3 tbsp. vitafiber or sticky syrup
  • 3 tbsp. water
  • 1 tsp. vanilla extact (I used Better Body Foods)
  • 1 tbsp. mini dark chocolate chips
    Chocolate
  • 2 oz sugar free dark chocolate
  • 1 tbsp. vitiafiber or sticky syrup
  • 1 tsp. coconut oil

Instructions

  1. In a large bowl, mix together the flours, powdered peanut butter and protein powder.
  2. In a microwave safe bowl, gently melt the vitafiber and coconut oil together.
  3. Add the vitafiber/coconut oil mix to the flour mix and use a fork to mix them together then add the vanilla extract and water (room temp). Keep mixing until a dough forms. Depending on the protein powder you use, you may need to add another tablespoon of water if your dough is too dry.
  4. Fold in chocolate chips.
  5. Press the cookie dough evenly into the ice trays (leaving some room at the top for the chocolate) then set a side while you melt your chocolate ingredients together.
  6. Spoon melted chocolate over each cookie dough piece and place the ice tray in the freezer for 30 minutes before serving.
  7. For easy removal, gently loosen the sides using a knife.

Cannoli Protein Cheesecake

Yield: 12 Slices

Cannoli Protein Cheesecake

Ingredients

  • 1 15oz container low fat ricotta cheese
  • 1 8oz container fat free cream cheese
  • 1/4 c egg whites
  • 2 scoops gourmet vanilla protein powder (I used PEScience)
  • 1 tbsp. tapioca flour (or cornstarch)
  • 1/2 tsp. stevia
  • 1 5.3 oz container vanilla greek yogurt (I used Light & Fit)
  • 15g mini chocolate chips
  • OPTIONAL powder sugar for dusting

Instructions

  1. Pre-heat oven to 350f and spray a spring form pan with non-stick spray.
  2. In a blender, add cream cheese, ricotta cheese, protein powder, tapioca flour, stevia and egg whites and blend on high until smooth. You may need to stop to scrape the sides.
  3. Pour the batter into the pan and spread evenly until flat.
  4. Bake for 35-40 minutes. The top should be solid but the middle should still jiggle.
  5. Once cooled, spread the entire container of vanilla greek yogurt over the top and sprinkled with chocolate chips and powdered sugar.

Almond Butter Stuffed Healthy Banana Bread with Cookie Crumble

I can’t think of an simpler thing to make with my overly ripe bananas than to bake a loaf of banana bread–except freezing them for ice cream or blending them for a smoothie. Okay, I can think of a ton of other delicious things to do with overly ripe bananas but this almond butter stuff banana loaf has protein cookie crumbles on top which makes it the BEST and HEALTHIEST banana bread I have ever had!

The almond butter center gets crisp when you bake it and gives the loaf a nice bit of crunch in every bite!

Cookie Crumble Almond Butter Stuffed Healthy Banana Bread

Prep Time: 7 minutes

Cook Time: 30 minutes

Total Time: 37 minutes

Yield: 10 slices

Cookie Crumble Almond Butter Stuffed Healthy Banana Bread

Ingredients

  • 2 medium bananas, ripe
  • 2 eggs
  • 1/4 c syrup (I used vitafiber--maple/honey/agave will also work)
  • 2 tbsp. coconut sugar
  • 4 tbsp. greek yogurt
  • 1/2 c oat flour
  • 1/2 c coconut flour
  • 1 tsp. baking powder
  • 2 tbsp. almond butter (I used Buff Bake)
  • 1/4 cookie, crumbled (I used Buff Bake Chocolate Peanut Butter Protein Cookie)

Instructions

  1. Pre-heat oven to 350f and spray a loaf pan with non-stick spray.
  2. Mash bananas using a fork, then mix in eggs, coconut sugar, syrup and yogurt, whisk until smooth.
  3. In a separate bowl, mix flours and baking powder together.
  4. Add to banana mixture.
  5. Pour half of the batter into the loaf pan then pour almond butter down the center of the batter and use a spoon to spread out a bit.
  6. Pour remaining batter over the almond butter then sprinkling with cookie crumbles.
  7. Bake for 30-33 minutes or until a toothpick comes out clean.
  8. Let cool for 15 minutes before removing from pan and slicing into 10 pieces and serving.
