for the filling
2gala applesor apples of choice
2 ½cupsblueberriesfresh or frozen
¼cuporganic cane sugar
2tbsp lemon juice
zest from half lemon
1tbsp cornstarch
dash cinnamon
for the crumble
1cupall purpose flour or 1:1 gluten free flour
½cuporganic light brown sugar
½cup vegan buttercold
Instructions
Pre-heat the oven to 350 F°. Chop and core the apples. Place them into a mixing bowl along with the blueberries, sugar, lemon juice, zest, cornstarch and cinnamon and combine.
In another bowl, use your hands to rub together the crumble ingredients until clumps form.
Transfer the fruit to a baking dish and top with the crumble. Bake the crumble for 35-40 minutes and golden brown. Serve with ice cream, yogurt or coconut whipped cream.
Notes
This recipe is best if serve immediately. Cover and chill for up to 3 days.
