Easy Apple and Blueberry Crumble

What could be better than three decadent layers of shortbread, warm apple pie filling and crunchy streusel topping? I took components from my favorite apple crumble bars to bring you this unbelievably delicious apple blueberry crumble.

I made this apple and blueberry crumble using fresh fruit, organic sugar, gluten-free flour and vegan butter so everyone can enjoy!

  • gala apples – you can use whichever apples are your favorite
  • blueberries – fresh or frozen
  • organic cane sugar and light brown sugar – this recipe will work with coconut sugar if needed
  • lemon juice and zest – the lemon zest really lends to the flavor of the fruit
  • cornstarch – or tapioca flour
  • cinnamon
  • all purpose flour – gluten-free 1:1 or measure for measure if needed
  • cold vegan butter – I used Earth Balance

how to make this apple and blueberry crumble recipe

  1. Chop and core the apples. Place them into a mixing bowl along with the blueberries, sugar, lemon juice, zest, cornstarch and cinnamon. Combine and then set aside.
  2. In another bowl, use your hands to rub together the crumble ingredients until clumps form.
  3. Transfer the fruit to a baking dish and top with the crumble. Bake the the apple & blueberry crumble in a pre-heat oven at 350 F for 35-40 minutes and golden brown. Serve with ice cream, yogurt or coconut whipped cream.

Correctly measuring your ingredients like the butter will help to ensure the crumble is crunchy rather than soggy. Add too much butter will result in a greasy and soggy topping.

What is the difference between streusel and crumb topping?

They are essentially the same thing. For me, I like to call it streusel when I add oats to the topping.

  • 2 gala apples or apples of choice
  • 2 ½ cups blueberries fresh or frozen
  • ¼ cup organic cane sugar
  • 2 tbsp lemon juice
  • zest from half lemon
  • 1 tbsp cornstarch
  • dash cinnamon

for the crumble

  • 1 cup all purpose flour or 1:1 gluten free flour
  • ½ cup organic light brown sugar
  • ½ cup vegan butter cold

Instructions

  • Pre-heat the oven to 350 F°. Chop and core the apples. Place them into a mixing bowl along with the blueberries, sugar, lemon juice, zest, cornstarch and cinnamon and combine.
  • In another bowl, use your hands to rub together the crumble ingredients until clumps form.
  •  Transfer the fruit to a baking dish and top with the crumble. Bake the crumble for 35-40 minutes and golden brown. Serve with ice cream, yogurt or coconut whipped cream.

Notes

This recipe is best if serve immediately. Cover and chill for up to 3 days.

This was indeed sooo easy to whip up and you can really modify to make this how you want it!! Crumbles remind me of cobblers my grandma used to make and this is so delicious and heartwarming!
