Gluten Free Blueberry Pie
This flaky buttery gluten free pie crust is bursting with fresh sweet and tangy blueberries. The best blueberry pie ever!

Filling
- 4 cups fresh or frozen blueberries
- 1/3 cup granulated sweetener of choice
- 2 tbsp tapioca flour
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 tbsp lemon juice

- 1 egg, beaten for egg wash
Filling
Once you have your crust ready, preheat oven to 350 F. In a large bowl, toss the filling ingredients together until well combined. Transfer to the crust. Top filling with star cutouts or a lattice crust. Brush crust with egg wash and bake for 30-40 minutes or until crust is golden brown.
