The Best Ever Gluten Free Blueberry Pie

Literally the best (and easiest!) homemade Gluten Free Blueberry Pie Recipe from scratch that you will ever try! If the crust doesn’t win you over, the sweet and tangy blueberry filling will! A perfect summer dessert!

This blueberry pie is everything I love about Summer all wrapped up into one delicious package. Flaky buttery crust bursting with sweet and tangy blueberries. And did I mention that this pie is made gluten free!?

Simple gluten free pie crust ready to be filled with your favorite fillings!

Pie is one of my favorite desserts to photograph so of course I spent hours shooting this gluten free blueberry pie. I spent way too much time (totally worth it!) manipulating my light to look as if there’s sun beaming in from a window on a hot summer day. Take a look at the photos below.

In the first photo, I used a diffuser with my artificial light. In the second photo I let the diffuser cover half of my subject and in the third I didn’t use a diffuser at all but held up a chair to create the beams of light. You can achieve all of this too with my $100 lighting setup!

Gluten Free Blueberry Pie

This flaky buttery gluten free pie crust is bursting with fresh sweet and tangy blueberries. The best blueberry pie ever!

Ingredients

Crust

  • see instructions

Filling

  • 4 cups fresh or frozen blueberries
  • 1/3 cup granulated sweetener of choice
  • 2 tbsp tapioca flour
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice

Other

  • 1 egg, beaten for egg wash

Instructions

Filling

  • Once you have your crust ready, preheat oven to 350 F. In a large bowl, toss the filling ingredients together until well combined. Transfer to the crust. 
    Top filling with star cutouts or a lattice crust. Brush crust with egg wash and bake for 30-40 minutes or until crust is golden brown.
