Unbelievably healthy flax banana bread loaded with fresh blueberries.


It’s definitely no secret that I love banana bread. I probably have about 20 different banana bread recipes on my blog. There really is no better way to use up those overly ripe banana, is there?


This week I bought a basket of fresh blueberries for $2.49! A dang steal right?

Bananas and blueberries go together like peanut butter and chocolate–my first love for a flavor combination.

Healthy Flax Blueberry Banana Bread

Unbelievably healthy flax banana bread loaded with fresh blueberries.


  • 3 overly ripe bananas
  • 1 c brown rice flour
  • 64g vanilla protein (PEScience 30% OFF code PBCHOCO)
  • 3 eggs, whole
  • 1/4 c ground flax
  • 1/4 c unsweetened almond milk
  • 1/4 c coconut oil, melted
  • 2 packets stevia
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 c fresh blueberries


  1. Preheat oven to 350F and prepare a loaf pan with parchment paper.
  2. Place the bananas and coconut oil into a mixer and beat until mush. Add in the eggs and almond milk and continue mixing until fluffy.
  3. Add in the remaining ingredients (except blueberries) and continue mixing just until combined. Fold in blueberries.
  4. Pour batter into the prepared loaf pan and bake for 44-46 minutes.
  5. Let cool completely before cutting into slices and serving.
