Healthy Double Chocolate Hazelnut Blossoms

Unbelievably healthy double chocolate hazelnut cookies!

  • 3/4 c gluten-free flour or oat flour
  • 1/4 c Truvia or granulated sweetener
  • 32g chocolate protein I used PEScience 30% off code PBCHOCO
  • 5 tbsp pumpkin puree
  • 1/4 c unsweetened cocao powder
  • 2 tbsp coconut oil, melted
  • 1 egg, whole
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp crushed hazelnuts
  • 30g sugar-free dark chocolate, Lily's

  1. Preheat oven to 350F and prepare a baking sheet with parchment paper and set aside.
  2. In a mixer, stir together all dry cookie ingredients. Add in the remaining cookie ingredients and mix until a dough forms.
  3. Separate dough into 12 evenly sized balls and roll each ball into the crushed hazelnuts.
  4. Use the back of a spoon to make an indent in the center of the balls. This should also press them somewhat flat.
  5. Bake for 7-9 minutes. Remove and let cool.
  6. Gently melt chocolate and spoon into the center of each cookie. Let cool at room temperature for a couple of hours or place in the fridge for 20 minutes or until chocolate hardens.

Use a plate based protein and dairy free chocolate for a lactose free cookie.
