I used PEScience protein in these cookies because it’s low in carbs and sugar (both under 3g) not to mention it’s a great quality protein you can taste which makes a world of difference, especially when baking. I used Gourmet Vanilla flavor which tastes like ice cream so you can imagine how this flavor really sweetens up the cookies without having to add real sugar!
Healthy Keto Friendly Chocolate Chip Cookies
Ingredients
- 1 1/2 c almond flour
- 32g vanilla protein powder PEScience 30% off code PBCHOCO
- 2 packets pure stevia
- 1/4 c unsweetened applesauce
- 2 tbsp extra virgin coconut oil or butter, melted
- 1 tbsp black coffee, optional
- 1/2 tsp butter extract if using coconut oil
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- pinch sea salt
- 1/4 c extra dark sugar-free chocolate chips
Instructions
- Place all the dry ingredients into a mixing bowl and stir until combined. Add in the remaining ingredients and mix until a dough forms. Cover with plastic wrap and chill in the freezer for 15 minutes.
- Preheat oven to 350 F and prepare a baking sheet with parchment paper. Use a cookie scooper to make 12 evenly sized balls. Place the balls on the baking sheet and press them flat. Bake for 13-15 minutes or until edges start to brown.
- Let cool before serving.
