Healthy Cookie Dough Truffles

Unbelievably delicious cookie dough bites covered in decadent sugar-free dark chocolate made gluten-free and high in protein!

    Cookie Dough
  • 1/2 c gluten-free oat flour
  • 1/2 c almond flour
  • 1/4 granulated erythritol or coconut sugar
  • 32g vanilla protein PEScience 30% OFF code PBCHOCO
  • 2 tbsp light butter
  • 1/4 c unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 tbsp sugar-free mini chocolate chips
  • pinch of salt if butter is unsalted
    Chocolate Coating
  • 2/3 c sugar-free chocolate chips (Lily's)
  • 2 tsp coconut oil, melted

  1. In a microwave safe bowl, gently melt the butter. Stir in the almond milk and vanilla and set aside to cool slightly.
  2. In a medium bowl, stir together the oat flour, almond flour, protein, salt, and granulated erythritol. Add the butter mixture and stir until a dough forms. Fold in chocolate chips. Cover in plastic wrap and place in the freezer for 15-20 minutes. Remove and separate dough into 10 evenly sized balls and return to freezer while you melt the chocolate and coconut oil together.
  3. Dip each ball in the chocolate using a fork, let the excess chocolate drip before placing the truffle on a piece of parchment paper. Once all the cookie dough balls are coated, place them in the freezer until chocolate hardens and enjoy!

Oat flour can be replaced with brown rice flour or gluten-free flour.
