With Valentine’s Day just around the corner, this healthy chocolate cupcake recipe was everything I had been dreaming up for the past month. These adorable little cakes are gluten-free, refined sugar-free, oil-free, low in fat and high in protein!

Healthy Chocolate Cupcakes with Blood Orange Frosting

Healthy decadent chocolate cupcakes made gluten-free, oil-free, refined sugar-free and high in protein. These cupcakes are frosted with creamy blood orange frosting.

Ingredients

  • 1 c gluten-free oat flour
  • 1/4 c unsweetened cocao powder
  • 32g chocolate protein PEScience 30% OFF code PBCHOCO
  • 2 eggs, whole
  • 1/2 c unsweetened almond milk
  • 1/4 c pumpkin purée
  • 3 tbsp coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch sea salt
    Frosting
  • juice from 1 blood orange
  • 1-2 scoop vanilla protein powder
  • 2 tsp agave
  • 1 drop red food coloring, optional
    Other
  • strawberries
  • sprinkles

Instructions

  1. Preheat oven to 350 F and prepare a muffin tin with 8 cupcake liners.
  2. Place all the dry ingredients into a bowl and whisk until combined. Add in the eggs, pumpkin and milk and stir until a smooth batter forms.
  3. Distribute the batter between the 8 cupcake liners and bake cupcakes for 16-18 minutes. Let cool.
  4. Stir together the frosting ingredients starting with just 1 scoop of protein powder and add more until you have reached a desired frosting consistency. *This will very depending on how much juice is squeezed from the blood orange.
  5. Frost cupcakes and top with strawberry hearts and sprinkles.

Notes

Blood orange can be replaced with any orange citrus flavor desired.
