This colorful fresh salad combines some of my favorite vegetables in one bowl. Refreshing and simple, this salad has crisp cucumbers and celery, delicious tomatoes and red onion and then topped with fresh cilantro and hemp seeds.
This popular party salad is gluten-free, vegan and keto friendly.
Healthy Cucumber and Tomato Salad

Store in an airtight container in the refrigerator for up to 4 days.
Ingredients
- 4 stalks celery, chopped
- 3 Persian cucumbers, sliced
- 3 roma tomatoes, chopped
- 1/2 c red onion, chopped
- 3 tbsp fresh cilantro, chopped
- 1/4 c extra virgin olive oil
- 2 tbsp red wine vinegar
- juice from 1/2 a lime
- 2 tbsp hemp seeds
- salt and pepper to taste
Instructions
- Add the celery, cucumbers, tomatoes and onion to a large bowl.
- Drizzle with olive oil, red wine vinegar and lime. Toss to coat everything.
- Garnish with hemp seeds, cilantro, salt and pepper.
