These simple and delicious peanut butter brownies are packed with sweet chocolate chips and a gooey peanut butter center. This recipe is made gluten-free and dairy-free.
It’s no secret that I love peanut butter and lately I’ve been craving it more than usual–actually that’s a lie. It’s pretty usual for me to spoon peanut butter out of the jar so everything is normal over here. Today I made healthy peanut butter brownies and then loaded them up with chocolate chips. How’s your Monday going?
This recipe is made so simple using oat flour, peanut butter, coconut oil, sweetener and an egg! That’s it (besides baking soda and junk)!
Healthy Chocolate Chip Peanut Butter Brownie Bars

Ingredients
- 1 c oat flour
- 1/4 c coconut oi, melted
- 1/3 c natural peanut butter
- 1/2 c erythritol or granulated sweetener
- 1 egg, whole
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/8 tsp sea salt
- 1/4 c dairy free chocolate chips
Instructions
- Preheat oven to 350F and prepare an 8x8 inch pan with parchment paper and set aside.
- In a medium sized bowl, stir together the peanut butter and coconut oil until smooth. Pour the mixture into a stand alone mixer and add the granulated sweetener, egg and vanilla extract. Mix until combined.
- Add in the oat flour, baking soda, baking powder and salt and continue mixing until a dough forms. Fold in chocolate chips. Press the dough evenly into the prepared pan. Bake for 13-15 minutes. Remove from oven and let cool completely before cutting into bars and serving.
- *Best if placed in then freezer for at least 2 hours before serving.
