Healthy Chocolate Covered Raspberry Date Bars

These healthy chocolate covered raspberry date nut snack bars are raw, vegan, gluten-free and they taste absolutely amazing! These delicious bars are a perfect cure for your late night chocolate craving or an early afternoon snack.

Notes
For PALEO use almonds instead of peanuts.
Ingredients
- 1 c peanuts
- 12-14 medjool dates, pitted
- 1/4 c raspberry jam Spread The Love
- 1 sugar-free chocolate bar Lily's
Instructions
- Place the pitted dates and peanuts into a food processor and blend until small crumbles form. If dates are fresh, you will only need 12-14 dates. If dates are dry, you may need 15-17 dates.
- Press the mixture into the bottom of an 8x8 inch pan lined with parchment paper.
- Spread the raspberry jam over the date/nut base.
- Melt 3/4 of the chocolate bar and cover jam with melted chocolate. Place the pan into the freezer for 20 minutes.
- Remove and cut into bars. Melt remaining chocolate and drizzle over bars. Return to freezer until chocolate is solid.
- Store in an airtight container in the refrigerator.
