Unbelievably healthy double chocolate hazelnut cookies!

Use a plate based protein and dairy free chocolate for a lactose free cookie.
Ingredients
Cookies
- 3/4 c gluten-free flour or oat flour
- 1/4 c Truvia or granulated sweetener
- 32g chocolate protein I used PEScience 30% off code PBCHOCO
- 5 tbsp pumpkin puree
- 1/4 c unsweetened cocao powder
- 2 tbsp coconut oil, melted
- 1 egg, whole
- 1/4 tsp baking powder
- 1/8 tsp salt
Other
- 2 tbsp crushed hazelnuts
- 30g sugar-free dark chocolate, Lily's
Instructions
- Preheat oven to 350F and prepare a baking sheet with parchment paper and set aside.
- In a mixer, stir together all dry cookie ingredients. Add in the remaining cookie ingredients and mix until a dough forms.
- Separate dough into 12 evenly sized balls and roll each ball into the crushed hazelnuts.
- Use the back of a spoon to make an indent in the center of the balls. This should also press them somewhat flat.
- Bake for 7-9 minutes. Remove and let cool.
- Gently melt chocolate and spoon into the center of each cookie. Let cool at room temperature for a couple of hours or place in the fridge for 20 minutes or until chocolate hardens.
