I have a confession to make. This is actually the first time I’ve ever made anything with poppy seeds. I usually just bake with ingredients that are already in my cabinet and poppy seeds just aren’t something I usually have hanging around. And for some reason I thought they were hard to find. This is so embarrassing but I thought you could only find them at a health food store or a special seed store or something. I WAS SO WRONG! I found these poppy seeds for $3.49 in the seasoning isle at Target!

Healthy Lemon Poppy Seed Banana Bread
Notes
*You may sub oat flour for any flour of choice. Coconut oil may be subbed for olive oil or butter.
Ingredients
- 3 bananas, ripe
- 2 eggs, large
- 1/4 c egg whites
- 1/4 c unsweetened almond milk
- 1 tbsp coconut oil, melted
- 4 tbsp lemon juice
- zest of 1 small lemon or 1/2 large lemon
- 1 c gluten-free oat flour
- 1/4 c granulated erythritol or coconut sugar

- 3 tbsp poppy seeds
- 2 tbsp baking powder
- 1 tbsp baking soda
Instructions
- Place the bananas, eggs, egg whites and milk into a mixer and beat for 1 minute. Add in the coconut oil, lemon juice and zest. Continue mixing until incorporated. Add in the remaining ingredients and mix until a batter forms.
- Pour the batter into a 9x5 inch loaf pan lined with parchment paper and bake for 38-40 minutes at 350 F.
- Let cool before cutting into slices and serving.
