These healthy turtle candy bars are layered with date caramel and sugar-free chocolate then topped with crunchy pecans to make the most decadent treat!
Halloween is just around the corner so I’ve really turned up my healthy candy making skills. I found bulk pecans on sale the other day and quickly decided to make pecan chocolate turtles like the ones my grandma always made except these ones are gluten-free, dairy-free, refined sugar-free plus high in protein!

Healthy Pecan Chocolate Turtle Bars
Ingredients
Base
- 1 c rolled oats
- 32g vanilla protein PEScience 30% OFF code PBCHOCO, vegan if necessary
- 1 tbsp ground flax
- 1/4 c natural almond butter
- 1/4 c all natural sugar-free maple syrup Joseph's
- Carramel Layer
- 12 dates, pitted
- 1/4 c + 1 tbsp all natural almond butter
- 2 tbsp all natural sugar-free maple syrup
- Chocolate Layer
- sugar-free chocolate bar (80g) Lily's
- Other
- 1/4 c pecans
Instructions
- Place all base ingredients into a food processor and blend until combined. Remove and press into a loaf pan lined with plastic or parchment paper. Place in the freezer while you prepare your caramel layer.
- Place all caramel ingredients into a food processor and blend until smooth. You will need to stop and scrape the sides from time to time. Press the caramel evenly over the base.
- Melt chocolate bar and pour evenly over the caramel layer and spread using a rubber spatula. Top with pecans and place in the freezer for 1 hour before cutting into slices and serving.
