These fluffy banana pancakes are loaded with sugar-free chocolate chunks and topped with peanut butter for a delicious breakfast stack everyone will love. Made gluten-free, high in protein and refined sugar-free!

Nothing new over here. Just doing what I do best. Making banana pancakes and loading them up with chocolate and peanut butter–and then devouring them in .364 seconds.

Healthy Chunky Monkey Oatmeal Pancakes

These healthy chunky monkey oatmeal pancakes are made gluten-free, high in protein and refined sugar-free!


  • 2 bananas, ripe
  • 2 eggs, large
  • 64g protein powder PEScience 30% off code: PBCHOCO
  • 1/2 c unsweetened almond milk
  • 1/2 c gluten-free rolled oats
  • 1/4 c gluten-free oat flour
  • 1 tbsp peanut butter Nuts 'N More
  • 2 tbsp sugar-free chocolate, chopped
  • 1 tsp baking soda
  • 1 tsp baking powder
    Topping (optional)
  • banana pieces
  • peanut butter
  • chopped chocolate


  1. In a large bowl, mash the bananas using a fork. Add in the eggs, almond milk and peanut butter. Whisk or use a hand mixer until well combined. Place the flour, oats, protein, baking soda and baking powder into a blender or food processor and blitz until combined. If you don't want chunky oats in your pancakes, blend until smooth. Dump the dry ingredients into the wet and mix until incorporated. Fold in chocolate pieces.
  2. Now to cook the pancakes! Prepare a skillet or pancake pan with non-stick spray and turn on medium-low heat. Cook pancakes 1/4 cup at a time until bubbles start to pop, flip and cook the other side until golden brown. Repeat until you have used all the batter.
  3. Finish pancakes with optional toppings and serve!
