My favorite “healthy” dessert in the world is a raw candy bar loaded with nuts and layered with date caramel. If you haven’t noticed, I try and incorporate some sort of date caramel goodie into a blog post every month or so. I’m obsessed to say the least and if you haven’t tried a raw caramel slice of some sort, don’t wait any longer. Date filled desserts are worth all the calories–and there’s a lot them!
Healthy Caramel Peanut Nougat Candy Bars
Notes
***These bars are extremely high in calories and fat. Although they are made with healthy ingredients, too much of anything is never a good thing.
**To reduce calories, use a sugar-free maple syrup in place of the agave.
*Store in an airtight container in the freezer. Let thaw 10 minutes before serving.
Ingredients
Nougat Layer
- 1 1/2 c raw cashews
- 1/2 c unsweetened shredded coconut
- 2 tbsp coconut oil, melted
- 3 tbsp agave or sticky syrup of choice
- 32g vanilla protein powder PEScience 30% off code PBCHOCO or 1/3 c coconut flour for vegan
- Caramel Layer:
- 12 medjool dates, pitted
- 1/4 c natural peanut butter
- 2 tbsp agave or sticky syrup of choice
Other
- 1/4 c peanuts, unsalted
Chocolate
- 1 c dark chocolate chips, vegan if necessary
- 1 tsp coconut oil
Instructions
- For the nougat layer, place all the ingredients into a food processor and blend until a dough forms. Press the dough into the bottom of a loaf pan lined with parchment paper and place in the freezer while you prepare your caramel layer.
- For the caramel layer, place all caramel ingredients into a food processor and blend until smooth. You will want to stop and scrape the sides as you go. Evenly press the caramel layer over the nougat layer. Sprinkle with peanuts. Place in the freezer for 1 hour.
- Remove from the freezer and cut into bars. Melt chocolate and coconut oil together until smooth. Place each bar on a piece of parchment paper and spoon chocolate over each bar, starting at the edges and smoothing over the top and the sides until completely covered.
- Return to the freezer until chocolate hardens. Enjoy!
